INGREDIENTS
3 small diced carrots
3 small diced celery stalks
1 small diced medium onion
¼ cup extra virgin olive oil
1 tsp chili flakes (as spicy as you like)
1 tsp sweet paprika (Spanish pimenton)
1 tsp oregano
2-3 garlic cloves, minced
3 ounces (85 grams) tomato paste
8 ounces (226 grams) crushed tomatoes
16 ounces lentils
8 cups vegetable broth or water or combination
8 ounces (4 cups or more) fresh spinach
EVOO to garnish
Parmesan cheese to garnish
Tiny cut chives to garnish
Salt and pepper to garnish...

By the age of 6, there was early evidence that food would play an important role in my life. Practicing penmanship and kitchen creativity, I co-authored my first recipe, “Ham Slam”, with one of my older siblings. It had all the makings of a classic 1960’s American kitchen treasure, featuring gourmet ingredients like Campbell’s cream of celery soup and Durkee’s canned French Fried onion rings. It’s no wonder my culinary career promptly took a diversion until around the age of 40.
But spending years as an executive in the business of marketing brands such as Apple, Microsoft, and Sony Pictures didn’t snuff out my lifelong passion for travel, food, and wine. I eventually found my way back to my culinary roots when I turned my attention to studying technique at Cordon Bleu Paris, exploring new foodie concepts around Europe and documenting them in words and pictures.
I’ve been privileged to pen articles and columns in many publications, including the Food52, Huffington Post, msn.com, Zester Daily, Santa Ynez Valley Journal, Michigan BLUE Lakestyle Magazine, Olive Oil Times and Olive Oil Source, the world’s top-ranked olive oil-related websites.
In the process, there was one more thing I learned. Despite the explosion of global cuisines in restaurants all across the U.S., you can’t fully experience the wide world of flavor all from your own backyard, Toto.
Following that thought put me and my partner, George on a plane to Alicante Spain in 2014 where we have lived ever since. Our mission is to explore the aromas, ingredients and collective imaginations that are all part of Spain’s vast culinary heritage.

This Warming Winter Lentil Soup is one of those recipes I almost consider to have medicinal properties. Do you know what I mean? The combination of ingredients here makes for a soup which does you so much good - and feeds your soul, at the same time! January isn’t the time for self-flagellation, in my opinion. We have so much pressure from the diet industry on us through the year, but January is the worst, pressuring us to ‘set goals’ to reveal ‘the new you’. How about just looking after ourselves, body and soul? That’s all I can commit to this month, and all I think any of us should plan for!

This CHEAP & EASY Lentil Soup Recipe is Life Changing!
This healthy and easy lentil soup recipe comes together in no time and is absolutely loaded with vegetables! Most of the ingredients are common pantry ingredients and rather inexpensive vegetables so this is a very budget friendly recipe for those looking to eat healthy and not break the bank. This is also a vegetarian friendly version with no meat based products. Leave out the cheese rinds and then it’s vegan too! The recipe makes a lot of soup that you can freeze and store for dinner or lunch on a busy day with very little time to cook.
INGREDIENTS
• 1 medium onion, small dice
• 3 celery ribs, small dice
• 2 medium carrots, small dice
• 1 shallot, finely chopped
• 2 russet potatoes, peeled and cut into ½ inch cubes
• 5-8 garlic cloves, minced
• 2-3 sprigs fresh parsley, finely chopped
• 1 lb dried lentils, rinsed & drained
• 2-3 tbsp olive oil
• 3 tbsp tomato paste
• 2 tsp Chef Ange Base Seasoning -
• 1 tsp smoked paprika
• 1 tsp Italian Seasoning
• 15 oz can fire roasted diced tomatoes
• 1 tbsp roasted garlic bouillon paste
• 8 cups vegetable stock
• 2 tsp white wine vinegar
• ½ - 1 tsp crushed red pepper
• 2-3 dried bay leaves
• 2 pieces parmesan cheese rinds
• 2 tbsp garlic & herb spice blend
• 2 cups baby spinach

This red lentil sweet potato soup recipe is quick and easy. Using simple ingredients this soup is high in protein, and naturally gluten-free. Flavored with warm curry spices and made entirely in the Instant Pot.

1 yellow onion, coarsely chopped

This is our recreation of the super hearty spiced lentil soup from BOL. Our good friends at BOL have made the bold decision to go completely plant-based and this is one of the dishes from their delicious range of products.
It’s not quite summer yet, and we love a warming soup on a chilly, rainy day. It’s perfect for making in batch and enjoying throughout the week.
