상큼한 과일찹쌀떡 만들기. Fruit glutinous rice cake

재료 : 귤, 바나나, 키위, 포도, 망고, 오렌지 등 집에 있는 과일 무엇이든 가능, 찹쌀가루 2컵, 끓인물 2컵, 설탕 3큰술, 소금 1큰술, 팥앙금 300그램, 고구마 앙금 300그램, 전분가루 조금, 볶은서리태콩가루 등
레시피 :
1. 여러가지 좋아하는 과일을 깨끗히 씻어서 물기를 닦아 준비한다.
2. 믹싱볼에 찹쌀가루 2컵, 끓인물 2컵, 설탕 3큰술, 소금 1큰술을 넣고 반죽기로 1차
익반죽(끓인물로 반죽하는 것)을 한다(손으로 치대줘도 됨)
* 여기서 중요한 것은 찹쌀가루와 끓인물의 비율이 중요(1:1)
3. 2를 래핑, 포크로 숨구멍을 내준 후 2분간 전자렌지에 돌려준다
4. 2분후 랩만 열어서 다시 2차 반죽기를 돌려준 다음 다시 2분간 전자렌지에 돌린다
5. 2분후 한소끔 식혀서 치대주면 완성
6. 쟁반에 전분가루(옥수수전분, 고구마전분, 감자전분, 콩가루 모두 가능)를 뿌린다
7. 과일에 팥앙금이나 고구마 앙금을 감싸며 붙여준 후 5(찹쌀떡)을 동글동글하게 모양을 만들어가면서 붙여준다
8. 모양이 예쁘게 완성되면 쟁반위에 뿌려둔 전분가루에 굴려준다
9. 하나씩 썰어주면 정말 예쁘고 먹음직스런 과일찹살떡 완성
*과일을 미리 썰어서 모양을 일률적으로 해도 예쁘지만, 과일의 모양을 살려서 큼직하게 만든 다음 여러가지 모양으로 썰어도 예쁘고 맛있다
* 휴일에 아이들과 재미삼아 같이 한번은 만들어먹을만 해요. ㅋ ㅋㅋ

Ingredients:
Fruits such as tangerine, banana, kiwi, grape, mango, orange, 2 cups of glutinous rice flour, 2 cups of boiled water, 3 tablespoons of sugar, 1 tablespoon of salt, 300 g of red bean paste, 300 g of sweet potato paste, starch powder, roasted soybean flour
Directions:
1. Wash various fruits and wipe dry.
2. Put 2 cups of glutinous rice flour, 2 cups of boiled water, 3 tablespoons of sugar, and 1 tablespoon of salt into the mixing bowl and put it into the kneader first
Knead the dough (you can knead it by hand)
*It is important that the ratio of glutinous rice flour and boiled water is 1:1.
3. Wrap the dough, make a pore with a fork, and turn it on the microwave for 2 minutes.
4. Return to the kneader again, and then turn it on the microwave for 2 minutes.
5. After cooling for a while, knead it to complete the dough
6. Sprinkle starch powder on the tray (corn starch, sweet potato starch, potato starch, soybean flour can be used)
7. Paste a paste of red bean paste or sweet potato paste on the fruit, and then paste the glutinous rice dough into a round shape.
8. When the shape is completed, roll it on the starch powder on the tray.
9. Slice it one by one to make a really nice and juicy fruity glutinous rice cake
*It is pretty to cut the fruit in advance to make a shape, but it is also pretty and delicious to cut fruit into large shapes after making the shape.

材料:
紫薯面糊材料:
*100克紫薯
*250毫升水用于煮紫薯
*(只需要100毫升紫薯水)
110克粘米粉
10克糯米粉
30克细砂糖
1茶匙酵母
1/2蛋清(大)
* 以上的材料可以用10克紫薯粉和 110毫升水替代
粘米粉面糊材料:
140克粘米粉
15克糯米粉
40克细砂糖
125毫升水
1茶匙酵母
1/2蛋清(大)
烘焙玻璃蒸盘尺寸
23(外径) x 20.8(内径) x 6 (高)厘米 (1.6毫升)
制作时要注意;
1.面糊的浓稠度要拿捏的对, 请跟视频所示范的一样
2.不要过度发酵,可以尝试将第二次发酵的时间从35分钟缩短到30分钟。 如果发酵过度,补救方法是加入一些普通面粉~请参考我的白米发糕的视频。
3. 蒸时不要開蓋。
4.蒸鍋的水要足夠, 水燒開下鍋, 大火蒸。
5.基础紫色和白色的麵糊是以同样等份舀入.之后的轮流舀入是一次比一次少的,尽量往蒸盘中间舀入麵糊它会自然從中心往外扩展的. 因为最上的面的一层会往下压的. 只是手的動作要快,要不然麵糊变老了或是过度发酵,导致米糕发不起来,就会影响花紋的美观了

Purple sweet potatoes batter-
*100g purple sweet potatoes
*250 ml water for boiling sweet potatoes
*(100 ml extracted water is needed)
110g rice flour
10g glutinous rice flour
30g castor sugar
1 tsp yeast
1/2 egg white (A size)
*The above ingredients can be replaced with 10g purple sweet potato powder and 110ml water
Rice flour batter-
140g rice flour
15g glutinous rice flour
40g castor sugar
125ml water
1 tsp yeast
1/2 egg white (A size)
Steaming glass bakeware pan size
23cm(OD) x 20.8cm(ID) x 6cm(H) (Capacity 1.6L)
Tips ;
1. The consistency of the batter is very important, please be the same as shown in the video.
2. Do not over fermentation, can try to cut down the duration of 2nd time fermentation from 35 mins to 30 mins. If over fermented, the remedy is add in some plain flour ~please refer to my rice cupcake videos.
3. Do not open the lid when steaming
4. Make sure the steaming pot is filling with enough water , water is in rolling boil before steaming, and steam on high flame
5. The basic purple and white batter are scooped in the same equal parts. The subsequent scooping in turns is less than once. Try to scoop the batter into the middle of the steaming pan. It will naturally expand from the center to the outside. Because the top layer's weight will be pressing down one after another. Just move your hands fast, otherwise the batter will become old or over fermented and it will affect the beauty of the pattern.
