How To make Rice Waffles with Fruit Sauce
Safflower oil or cooking -spray; to coat waffle iron 3/4 c Sifted rice flour
2 ts Baking powder
1 ts Nutmeg
1 ts Cinnamon
1 pn Salt
1 tb Honey
2 Eggs; separated
1 c Nonfat milk
1/4 c Safflower oil
1 c Cooked rice
1 c Sliced strawberries
2 ts Date sugar or maple syrup
2 ts Arrowroot powder
c Nonfat yogurt Recipe by: the California Culinary Academy Preparation Time: 0:40 1. Preheat waffle iron and lightly brush with safflower oil.
2. In a medium bowl combine rice flour, baking powder, nutmeg,
cinnamon, and salt. In a separate bowl combine honey, egg yolks, milk, the 1/4 cup safflower oil, and rice. Beat egg whites until stiff peaks form. Combine dry and wet ingredients, then fold in egg whites. 3. Preheat oven to 200 degrees F. Cook waffles, one at a time, keeping
them warm in the oven on a heatproof platter. In a small saucepan combine strawberries, date sugar, and arrowroot. Cook over medium-high heat until thick. Let cool slightly, then mix with yogurt. 4. Pour strawberry sauce over warm waffles and serve.
Makes about 8 waffles.

How to Make Danish Pancakes with Ice Cream and Fruit Sauce. A traditional dansk pandekage recipe
Traditional Danish pancakes are very similar to crepes. However, traditional Danish pancakes are served only as a dessert. This is a delicious Danish Pancake recipe! If there is one thing our family loves is Danish pancakes or in Danish danske pandekager. Danish pancakes are very similar to crepes. The smell of a dansk pandekage on the pan is sure to attract everyone in the neighborhood, and your children will cling to you while constantly asking when their pandekager are done.
How to Make Homemade Danish Pancakes with Ice Cream and Fruit Sauce.
Ingredients:
•1 cup of all-purpose flour
•2 teaspoons of sugar
•a pinch of salt
•2 eggs
•2 cups of milk
•European butter for frying
•grated lemon peel
•optional filling for the pancakes such as sugar, fruit or Nutella
Directions:
1. Add all ingredients (except butter) into the bowl. Mix well until all clumps are gone.
2. Let the batter sit in a large measuring cup for 20 to 30 minutes.
3.Now you are ready to start frying pancakes! Add a bit of butter to a non-stick skillet and heat until medium warm.
4. Tilt the pan approx. 90 degrees and pour batter from the top. The batter will, run down and fill the pan from rim to rim. You can also pour the batter in the middle of the pan and quickly make circling motions to distribute the batter all over the pan. The goal is to have as thin a batter layer as possible.
5. Cook until the pancake is a bit stiff. Before you flip the pancake be sure the pancake is firm on the edges.
6.When ready flip over the pancake. You will see it is nice and golden brown. Cook the other side for another 1 minute. The pancake should be light brown on both sides.
7. When ready, remove the Danish pancake from the frying pan.
8.Repeat the steps until you have used up all of the batter.
Filling ideas:
•fresh fruit - cut up strawberry's, bananas, blueberries, raspberries, etc
•jam or jelly
•sugar
•whipped cream
•Nutellla

Today i made this very tasty Blueberry Compote/Sauce which turned out to be super delicious.
A perfect sauce/compote which can be served as toppings on cakes, pancakes!
Make BLUEBERRY COMPOTE/SAUCE the way i do and enjoy!????
In a suacepan add 1 Cup Blueberry, 1/4 cup sugar &1/4 cup water,1/2tsp lemon juice, pinch salt....mix gently. Let it cook on medium low flame for 10 mnts. Mix 1tbs cornstarch with 2tbs water... add to the sauce & stir well and cook for 2 mnts. add 1tsp vanilla essence and mix well. Blueberry sauce ready!

●1 1/2 tablespoons sugar
●1 tablespoon plus 1 teaspoon baking powder
●2 teaspoons baking soda
●1/2 teaspoon ground cinnamon
●1 teaspoon kosher salt
●4 cups buttermilk
●4 large eggs
●1/2 cup vegetable oil
●1/2 cup cooked wild rice (rice should be overcooked), drained well
●Melted butter, for the waffle iron
●6 cups buttermilk
●Kosher salt
●2 teaspoons chile de arbol powder, or 2 tablespoons hot sauce
●2 chickens (3 to 4 pounds each), cut into 8 pieces
