Stuffed mushrooms are always a party favorite, especially during the holidays! Soft mushroom caps are stuffed with a cheesy, herby, and garlicky filling. Then baked until golden with crumbled pecans on top. The perfect vegetarian appetizer I'd say!
Unlike most stuffed mushroom recipes, this one is gluten-free, as I've swapped panko breadcrumbs for chopped pecans. And I think it really elevates the flavor! It's truly an appetizer both vegetarian and non-vegetarians will love. And perfect for both Thanksgiving and Christmas. Because everyone craves cozy, indulgent foods during the holidays right? Shopping List:
12-18 mushrooms depending on size
2 tbsps butter
1/4 cup panko bread crumbs
4-8 oz pancetta (or thick cut bacon)
4 oz cream cheese
1/2 onion diced
2 tbs butter
1/2 cup shredded parmesan cheese
olive oil or avocado oil
salt, pepper, garlic, onion powder, red pepper flakes
2-3 tbsps diced parsley
Directions:
Preheat oven to 400 degrees.
Remove stems from mushroom caps and use a spoon to hallow them out a bit. Dice mushroom stems, green onion, yellow onion and chop bacon. Fry bacon or pancetta and set aside. Remove 1/2 of the excess grease and add in the veggies. Once the veggies are cooked, add to the cream cheese and pancetta. Mix everything until well incorporated. Spoon mixture into mushroom caps and top with parmesan cheese. Bake 12-15 minutes. Baste with melted butter half way through if desired.

SPICY GREEN LEPRECHAUNS
**STUFFED MOREL MUSHROOMS**
8 Large, fresh or frozen fresh morel mushrooms halved
8 ounce pkg cream cheese
1/2 cup cubed mozzarella
1/2 cup chopped fresh chives
1-2 serrano peppers diced (depends how hot you like it)
Salt & black pepper to taste
Seasoned flour ( I like Drake’s)
Olive oil and butter for sautéing
Method:
Combine cream cheese, serrano peppers and chives in a food processor and blend until smooth. The mixture will turn green.
Fold in cubed mozzarella, pepper & salt.
Fill morel halves and combine two to make a whole morel
They will naturally stick together.
Dust in seasoned flour.
Sprinkle with salt & black pepper to taste
Freeze or refreeze overnight
In a hot skillet add oil and butter
Fry morels until golden brown, turning or covering as needed and until the cheese begins to ooze from the sides.
Always cook properly identified morel mushrooms thoroughly.
Serve immediately.

Two-Cheese Stuffed Mushrooms
*Ingredients*
cream cheese, garlic, mozzarella, mushrooms, parsley, pepper, salt, vegetable oil
*Recipe*
Preheat the oven to 360 degrees F/180 degrees C.
Remove the stems of the mushrooms and chop them into little pieces.
Heat oil in a cast-iron skillet to a medium high temperature.
Add 2 garlic cloves and let them spread their flavor for a couple of minutes.
Remove the garlic.
Put the chopped mushrooms in the skillet, add salt and pepper, and cook them until they turn a golden brown color.
Add the chopped mushrooms to a large bowl. Mix them with cream cheese and fresh parsley.
Add a pinch of salt.
Fill the mushrooms with the cheese, parsley, and mushroom stem mix.
Top every mushroom off with shredded mozzarella.
Cook in the oven for 20 minutes.

Cheese Stuffed Mushrooms Recipe | How To Make Stuffed Mushroom
We are sharing how to make cheese stuffed mushrooms. You can stuff just about anything into mushroom caps, but this combination of melty cheese and butter is our favorite.
You'll need
400 g button mushrooms
150 g shredded cheese
Butter
Salt
Parsley
We love using cheddar or mozzarella but processed cheese, feta or even creamier cheeses will all work. Of course, a combination of different cheeses is a great idea, too!
