Healthy Strawberry Oatmeal Bars
This healthier oatmeal bars recipe is a favourite, because these delicious treats are easy to make and made with fresh strawberries, whole grain butter crumb topping.
Prep time 10 minutes
Cook time 40 minutes
Ingredients:
1 cup old-fashioned rolled oats
3/4 cup whole wheat flour
1/3 cup brown sugar
1/4 tsp ground ginger
1/4 tsp salt
6 tbsp unsalted butter, melted
2 cups strawberries, diced
1 tsp cornstarch
1 tsp freshly squeezed lemon juice from 1/2 lemon
1 tbsp granulated sugar
Instructions:
Preheat the oven to 375 degrees F. Line an 8x8-inch baking pan with parchment paper.
In a medium bowl, combine the oats, flour, brown sugar, ginger, and salt. Pour in the melted butter and stir until it forms clumps and the dry ingredients are evenly moistened. Set aside ½ cup of the crumble mixture, then press the rest into the bottom of the prepared pan.
In a small bowl add diced strawberries, corn starch, sugar and lemon juice. Stir well.
Scatter the strawberries over the crust. Sprinkle the reserved crumbs evenly over the top.
Bake the bars for 35 to 40 minutes, until the fruit is bubbly and the crumb topping smells toasty and looks golden. Place the pan on a wire rack to cool completely . Then slice, and serve.

2 cups (205 g) oats gluten-free if needed
1 cup (120 g) almond flour
1 cup (90 g) oat flour (ground oats) gluten-free if needed
1 small (80 g) banana mashed
1/4 cup (80 g) maple syrup or agave syrup
1/4 cup (60 g) coconut milk canned
2 tsp baking powder
Strawberry Filling:
3 cups (450 g) diced strawberries
1/3 cup (105 g) maple syrup or agave syrup
2-3 tsp lime or lemon juice
5 tsp chia seeds
3 tsp potato starch or cornstarch

Ingredients:
1 cup old-fashioned rolled oats
3/4 cup all-purpose flour
1/3 cup light brown sugar
1/4 tsp ground ginger
1/4 tsp salt
6 tbsp butter, melted
2 cups strawberries, diced small
1 tsp cornstarch
1 tbsp lemon juice
1 tbsp sugar, divided
Icing:
1/2 cup powdered sugar
1/2 tsp vanilla extract
1 tbsp milk
Directions:
To a large bowl, add in the flour, oats, brown sugar, ginger, salt and melted butter. Mix until well combined. The consistency will be crumbly.
Line an 8x8 baking dish with parchment paper. Dump in the mixture, reserve 1/2 cup for the topping, and press the rest into the bottom of the baking dish in an even layer. Evenly spread out half of the diced strawberries on top of the flour/oat mixture. Sprinkle on the cornstarch in an even layer followed by the lemon juice. Sprinkle on the sugar. Add on the remaining strawberries, and sprinkle on the tbsp of sugar. Add on the remaining crumble topping.
Bake 375 degrees for 35 - 40 minutes.
Once the bars have cooled, drizzle on the icing. Enjoy! These bars should be stored in the fridge.
