Raisin Spice Muffins
Oh my gosh you guys, these are amazing! Even people who don't like raisins ate more than one of these. Simple recipe to whip up and the only extra equipment needed is muffin tins and paper muffin cups. I would have rather used my stand/hand mixer for these as it got a little thick, but they still worked out. And the smell....you have to make them yourself to realize how amazing these smell.

Raisin Bran Muffins
* Bake 375 F, 190 C, Time 18-22 min
* Soak, 1/5 cup of raisins in hot water 10 min to 15 minutes.
Dry Ingredients
. 1 cup sifted all purpose flour
. 1 1/4 cup wheat bran or as I used (crushed bran cereal)
. 1 1/5 tsp baking powder
. 3/4 tsp salt
. 1/2 tsp baking soda
. 1/2 tsp cinnamon
Mix all dry ingredients together in a separate bowl, set aside.
Wet Ingredients
. 2 eggs
. 1/4 cup canola oil
. 1/4 cup brown sugar
. 1/4 cup molasses
. 1 cup plain yogurt
Whisk 4 first wet ingredients together until well incorporated.
Add yogurt and whisk until smooth.
Add raisins and mix well.
Add wet into dry ingredients
Mix well. Immediately add mixture to the prepared muffin tray.
Bake at listed temperature, 18, 22 min .375 degrees F or 190 degrees C.
Let cool 5 min, then transfer to cool on rack.
*note, I should have filled the muffin batter to almost the top.

These are now my go-to raisin bran muffins, because they are delicious and nutritious and use NO WHITE FLOUR!! So simple and easy to make - they keep well in the fridge or if need be, they can be frozen and enjoyed later :)

Ivo’s Cocoa/Cinnamon Bran Muffins – with whole wheat flour
Makes 9 large or 12 medium sized muffins.
Ingredients
• 150 grams ( 5.3 oz) (~1 ¼ cup) whole wheat flour
• ½ TSP fine salt
• 1 TSP Baking Soda
• 1 TSP Baking Powder
• 1 TBSP Cinnamon
• 3 TBSP Cocoa
• 1 1/2 cups, wheat bran
• 1 ¼ cup buttermilk (or mix regular milk with 1 TBSP lemon juice to make buttermilk)
• 2/3 cup raisins
• ¼ - ½ cup chopped walnuts (or nuts of your choice)
• 1/3 cup olive oil or extra virgin olive oil.
• ¼ cup unsweetened apple sauce
• ½ cup brown sugar (or ¾ cup if you prefer sweeter muffins)
• 2 large eggs, slightly beaten.
• 2 TSP vanilla
• 1/3 cup olive oil (or vegetable oil)
• Optional oatmeal for decorating
Process
• Preheat oven to 375 degrees F.
• Soak raisins in water, set aside.
• In a bowl, mix buttermilk to bran until incorporated – set aside, let stand 5 minutes.
• In a different bowl, add flour, salt, baking soda, baking powder, cinnamon, and cocoa. Mix (a whisk works great), set aside.
• To your bran mixture, add the eggs, vanilla, brown sugar, apple sauce and olive oil – mix to incorporate.
• Now you can mix the bran mixture with the flour mixture and mix until all the flour is absorbed.
• Fold the nuts into the mixture.
• Strain the water from your raisins and fold them in as well.
• Place muffin cups in your muffin baking pan and fill each of them to the same level
• Sprinkle optional oatmeal on top of each muffin.
• Bake for 17 – 20 minutes.
• Let cool and enjoy ????
