Sweet And Sour Plum Sauce Mackerel Recipe | Mildly Spicy | Aunty Mary Cooks. Fried mackerel fillets cooked in a sweet and sour plum sauce, mildly spicy, is very delicious. Aunty Mary shows how to make this sweet and sour plum sauce mackerel easy recipe at home. It goes very well with rice or bread, even pasta.
Note :
1. Frozen mackerel fillets are used in this recipe, Fresh ones can be used too.
2. Best to serve hot.
3. The amount is enough for 6-8 people
Ingredients
About 750g frozen mackerel fillets (8 pieces), defrosted, bones in the centre removed
1 bulb garlic, peel and finely chopped
1 knob ginger, finely sliced
5 red chillies, seeds removed and finely chopped
1 egg, lightly beaten
Oil for frying
Seasoning sauce
1 tsp salt
3 Tbsp sugar
4 Tbsp tomato ketchup
2 Tbsp sriracha chilli sauce
3 Tbsp plum sauce
2 Tbsp vinegar (I used apple cider vinegar)
1 C water
To Thicken
1 tsp corn starch
1 Tbsp water

First seven ingredients
4 lbs(2 kg) black or red pitted plums,coarsely chopped
1 1/2 cups (375 ml) firmly packed light brown sugar
1/2 cup (125ml) rice vinegar,or apple cider vinegar
1/4 cup(60 ml)light soy sauce
1 tsp(5 ml) grated fresh ginger
1 medium onion, chopped
3 garlic cloves, minced
Second set of ingredients
1tsp (5 ml) salt
1 tsp (5 ml) dried crushed red pepper, or more to taste.
1/2 tsp (2 ml) fennel seeds
1/2 tsp (2 ml)freshly ground szechuan peppercorns, or black peppercorns.
1/2 tsp (2 ml) ground cinnamon
1/2 tsp (2 ml) ground ginger
1/2 tsp (2 ml)ground red pepper
1/8 tsp (.5 ml) ground cloves
2 star Anise

Home Canned Plum Sauce
I love having sauces around to make everyday meals even better. This is a great sauce to add flavor to chicken or pork and it is also a terrific dipping sauce. I didn't mention in the video to make sure you use hot pre-steralized jars. To do that simply put them in water and boil them for 10 minutes before you fill them.

1 kg Victoria Plums (or plums of your choice)
1 tsp ground ginger
2 scotch bonnet peppers
1/4 tsp cayenne pepper
500g sugar
4 tbsp Apple cider vinegar
4 tbsp soy sauce
