How To make Spicy Apricot Oat Muffins
2 c Unbleached Flour, Sifted
1/2 c Sugar
3 t Baking Powder
1 t Salt
2 t Pumpkin Pie Spice
1/2 c Quick-cooking Oats
1 c Chopped Dried Apricots
1/2 c Chopped Walnuts
2 ea Large Eggs, Slightly Beaten
1 1/3 c Milk
1/4 c Vegetable Oil
Sift together flour, sugar, baking powder, salt and pumpkin pie spice into large mixing bowl. Stir in oats, apricots, and walnuts. Combine eggs, milk and oil in small bowl; blend well. Add all at once to dry ingredients, stirrin just enough to moisten. Spoon batter into greased 3-inch muffin-pan cups, fill 2/3rds full. Bake in 350 degree F. oven 30 minutes or until golden brown. Serve hot with butter and homemade jam or jelly.

Ingredients:
130 g oat flakes(gluten free) (1 1/2 cup)
240 ml hot water (1 cup)
leave to soak for 5 minutes
2 eggs
30 g(2 1/2 tbsp) sweetener(stevia/or your choice)
1 tsp vanilla extract
120 g yogurt (1/2 cup)
50 g melted and cooled butter(1/4 cup)
1 apple
80 g blueberries (2.5 oz)
7 g baking powder (1/2 tbsp)
20 x 8 cm baking form(7.9 x 3.1 inch)
bake for 50 minutes at 180°C/ 360°F

Dried Apricot Muffin with Pumpkin Spice & Meringue Topping
With fall being officially here, we are craving for all the comfort food that warms your heart and bursts with flavour and spices. These muffins are filled with flavour and you can eat it without any topping and still enjoy it. But the meringue topping is adding that something that makes it irresistible.
As for the butterscotch glaze, I have to mention that it did not completely dry (i made it with milk). I'm doing it again and will try with cream and chips (like for a ganache) same as I indicated in the video. However at this time it is not tested. I will come back with feedback as soon as I can. I included the butterscotch glaze in the video because it is so delicious!
Update: The glaze dried next day (I kept the muffins in the refrigerator) so should be ok to try.

Spiced Apricot Recipe
Serves 12
Ingredients:
¾ cup packed brown sugar
3 tsp. pumpkin pie spice
2 tsp. baking powder
½ tsp. salt
¼ tsp. ground cardamom
3 cups old-fashioned oats
½ cup chopped dried apricots
½ cup chopped pecans, toasted
3 large eggs
1½ cups fat-free milk
½ cup unsweetened applesauce
1½ tsp. vanilla extract
¼ cup butter, melted
TOPPINGS
3 cups vanilla yogurt
½ cup apricot preserves, warmed
Directions:
Preheat oven to 350°. In a large bowl, mix the first 5 ingredients; stir in oats, apricots and pecans. In another bowl, whisk together eggs, milk, applesauce and vanilla; gradually whisk in melted butter. Stir into
oat mixture. Transfer to a greased 11x7-in. baking dish that fits into the unit.
Slide the Pizza Rack into Shelf Position 5. Place the baking dish on the Pizza Rack. Turn the Function Dial to Pizza/Bake, set temperature to 350° and set timer to 30 minutes. Bake until set and edges are lightly browned, 25-30 minutes. Cut into 12 portions; serve with toppings.
