How To make Spiced Almond Macaroons
3/4 c Superfine sugar
2 c Sliced almonds; ground
2 ts Cinnamon
3 lg Egg whites
2 tb Sliced almonds
Grease cookie sheets well. Mix sugar, ground almonds, and cinnamon. Beat egg whites until stiff but not dry. Gently stir in ground almond mixture. Drop by teaspoonfuls 2 inches apart onto cookie sheets. Sprinkle with a sliced almond or two on top of each. Bake 350~ for 10 minutes until golden brown. Cool 2 minutes before removing to wire rack. If the last few stick, return pan to oven to reheat and remove cookies immediately. -----

3 drops of Wilton orange food coloring (optional)

Yield 12 macaroons
Get the cookie sheet ready with parchment paper or grease well. Preheat oven to 350 degrees.
Ingredients:
2 egg whites
1/2 C (+) brown sugar
1 C almond flour
Beat egg whites until stiff and fluffy. Add brown sugar and almond flour. Fold together. Spoon out or use a cookie scoop onto a parchment-covered baking sheet. Bake for 8-12 minutes. Keep a close eye until golden brown on top. Immediately remove them from the baking sheet onto a cooling rack or they will stick to a pan or parchment as they cool. Keep in an airtight container. NOT IN THE REFRIGERATOR. (they will get soggy)
