How To make Southwest Tomatillo Salsa Pizza
-Waldine Van Geffen VGHC42A 4 6" flour tortillas
1/2 c Tomatillos; chopped
1/2 c Plum tomatoes; chopped
2 Jalapenos; seed, chop fine
2 tb Cilantro; minced
1 tb Lime juice
1 cl Garlic; minced
1/2 ts Hot pepper sauce
1/2 ts Ground cumin
1/4 ts Salt
8 oz Healthy Favorites Low-fat
-Mild Cheddar; shred, divide 2 sm Chicken breast halves; bone,
-skin, cut in thin strips 1 tb Chili powder
1/2 c Thin red onion wedges
Heat oven to 375~. Place tortillas on cookie sheet. Bake 5 minutes or until lightly toasted. In small bowl, mix tomatillos, tomatoes, jalapenos, cilantro, juice, garlic, pepper sauce, cumin and salt. Stir in 1 cup cheese. Mix chicken with chili powder, tossing to coat. Spray skillet with Pam. Cook chicken until tender. For each pizza, spreac 1/2 cup tomato mixture on 1 tortilla. Top with chicken, onion wedges and 1/4 cup remaining cheese. Bake 10 to 12 minutes or until cheese is melted.

I got a request from Miranda Greenie to recreate Chili's Southwest Eggrolls. These were not exactly like Chili's, left out the spinach in case anyone was wondering the difference. Probably a bunch of other stuff too. Either way these things were easy to make and absolutely delicious. Enjoy!

Shredded Chicken and Tomatillo Tacos with Queso Fresco

Yield: 4 servings
Ingredients
6 tomatillos, husked, washed, and grilled until blackened
1 serrano, grilled until blackened
Olive oil
1/2 small red onion, coarsely chopped
2 cloves garlic, coarsely chopped
1 cup chopped fresh cilantro
1 lime, juiced
2 tablespoons honey
1 1/2 cups shredded rotisserie chicken
8 blue corn tortillas
1 cup crumbled queso fresco
Directions
Preheat the grill to medium. Add the blackened tomatillos and serrano to a small saute pan and briefly saute in a little olive oil on the grates of the grill.
Place the tomatillos, serrano, onion, garlic, cilantro, lime juice, and honey in a blender and blend until smooth. Place the tomatillo mixture in a large saute pan and place on the grates of the grill. Bring the mixture to a simmer, add the chicken, and heat through.
Place the tortillas on the grill, and grill for 20 seconds on each side. Spoon the chicken mixture into the tortillas and top with a few tablespoons of queso fresco. Fold the tortillas in half serve immediately.

Hey y’all! I have a simple and delicious salsa recipe for you. Easy Southwest Salsa, also known as Cowboy Caviar, is full of so many flavors and colors. It’s so pretty, and tasty too!
Crisp green and yellow onions, sweet tomato, fragrant cilantro, creamy avocado, tender corn and black beans and squeeze of sweet lemon and lime all meld together to create this amazing side dish. It’s healthy, nutritious and so good! Your guests will love it, and it’s unbelievably easy.

0:13 - Start with green onions.
0:17 - Chop green onions fine.
0:22 - Dice a Roma Tomato.
0:31 - Chop cilantro.
0:36 - Chop an onion.
0:40 - Dice an avocado.
0:45 - Add corn to a bowl.
0:49 - Add black beans.
0:54 - Add the fresh, chopped ingredients.
1:02 - Give it a stir.
1:08 - Add in the avocado.
1:14 - Fold in the avocado.
1:19 - Add in a bit of lime juice.
1:24 - Stir one more time.
1:27 - Transfer the salsa into a serving dish.
1:37 - Garnish with slices of lime.
