How To make Slice& Bake Oatmeal Cookies
2 cups butter or margarine
2 cups sugar
2 cups brown sugar
4 eggs
2 teaspoons vanilla
4 cups flour
5 cups rolled oats
1 teaspoon salt
2 teaspoons baking soda
2 teaspoons baking powder
3/4 cup nuts
chopped
1 cup raisins :
* see note
*can use up to 2 cups.
Cut four 14"x12" pieces of waxed paper or plastic wrap. Cream butter or margarine and sugars in a large bowl until smooth. Beat in eggs and vanilla until light and fluffy. In a medium bowl, combine dry ingredients. Stir flour mixture into egg mixture until blended. Stir in nuts and raisins. Divide dough into 4 pieces. Shape each piece into an 8 to 10 inch roll. Wrap each roll in 1 piece of waxed paper or plastic wrap. Place in a freezer container with a tight-fitting lid or wrap airtight in a piece of foil. Label and date. Store in freezer. Use within 6 months.
To make cookies: Slightly thaw dough roll. Preheat oven to 375F. Lightly grease baking sheets; set aside. Cut dough into slices or chunks. Place dough about 1 inch apart on prepared baking sheets. Bake 10 to 12 minutes until edges are light brown and centers are slightly set. Cool about 2 minutes on baking sheet. Remove cookies and cool on wire racks.

Choc Chip Protein Oat Slice Recipe
Ingredients
1½ cups Rolled Oats
½ cup Rice Flour
75g Stevia
Pinch of Salt
1 tsp Cinnamon
1 tsp Baking Powder
2 scoops VPA Vanilla WPI
1 tsp Vanilla
2 Flax Eggs
4 tbsp. Coconut Oil
50g Sugar Free Choc Chips
Method
Preheat the oven to 180º. Grease and line a 20cm square baking tray.
To make the flax eggs, combine 2 tbsp. of flax meal and 6 tbsp. water. Rest for 10 min.
Add all ingredients except the choc chips, to a food processer and blitz on high until oats are finely chopped and mixture cones together.
Transfer to the baking tray and top with choc chips.
Bake for 15- 20 minutes.

• 3/4 cup (170 grams) unsalted butter, room temperature (1 1/2 sticks)

• 3/4 cup (100 grams) all purpose flour
• 1/2 teaspoon baking soda
• 1/2 teaspoon fine sea salt

This slice is very easy to make and contains lots of protein

Recipe
Mix together 180 g (6.3 oz) rolled oats, 150 g (5.3 oz) selfraising flour (or plain flour + 2t baking powder), 140 g (5 oz) coconut, 140 g (5 oz) brown sugar and 130 g (4.6 oz) choc chips
Melt 75 g (2.6 oz) butter and beat 4 eggs together
Add eggs and butter to mixture
Mix together until dough forms
Spread the dough into an ovensafe dish
Bake at 180°C (350°F) for 40 minutes
Variation: Replace choc chips with sultanas

Ingredients:
For the oat crust:
2 cups (180g) Rolled oats
1 cup (125g) All-purpose flour
3/4 cup (150g) Light brown sugar
3/4 cup (170g) Softened Butter, cubed
1/2 teaspoon Ground cinnamon (optional)
1/4 teaspoon Salt
1/2 teaspoon Baking soda
For the date filling:
400g (14.1oz) Medjool dates, pitted
1 cup (240ml) Water
1 teaspoon Vanilla extract
1 tablespoon Lemon juice
Directions:
1. Place dates, water and lemon juice in a small saucepan. Bring to a boil, stirring occasionally. Reduce the heat and simmer for 5-8 minutes, stirring occasionally, until the dates are soft. Remove from heat and add vanilla extract. Let cool to room temperature.
2. Preheat oven to 350F (175C). Line a 9-inch (23cm) square baking pan with a strip of parchment paper. Set aside.
3. Make the crust: In a large bowl, combine oats, flour, salt, brown sugar and baking soda. Add the butter and mix until crumbly.
4. Press 2/3 of the mixture into the bottom of the baking pan. Spread the filling over the base, Sprinkle the remaining oat mixture.
5. Bake for 25-30 minutes, until golden brown. Let cool completely, then refrigerate for at least one hour before cutting into squares.

brown sugar - 60g
