TOTORO ICEBOX COOKIES
These were quite difficult to make but just take your time and have a rolling pin, scraper and parchment paper ready, good luck!????
Ingredients:
90 gram powdered sugar (3/4 cup)
250 gram all purpose flour (1 1/2 cup)
150 gram unsalted butter (2/3 cup)
1 egg
1 tsp vanilla extract
Pinch of salt
Black food coloring
*optional white food coloring

Makes about 25 cookies
Ingredients:
1 cup (230g) Butter, softened
2 cups (250g) Flour
2/3 cup (85g) Powdered sugar
Optional additions:
Vanilla extract
Salt
Sugar for coating
Directions:
1. Preheat oven to 350F (180C). Line a baking tray with parchment paper, set aside.
2. In a large bowl cream together the butter and powdered sugar until light and fluffy. Add the flour and mix until combined. If the dough is too soft, add 2-3 tablespoons of flour
3. 2 ways to shape the cookies:
A. Shape the dough into a disk form, wrap in plastic wrap and refrigerate for 1 hour. Then, roll out the dough into 1/4-inch (1/2cm) thick. Then, cut into desired shape (hearts, round, rectangle).
B. Roll the dough into a log shape, wrap it with plastic wrap and freeze for 30 minutes. Then, unwrap and slice the log into 1/4-inch (1/2cm) thick slices.
4. Transfer the cookies to the baking tray and bake for 12-15 minutes, until slightly golden.
5. Allow to cool.
Notes:
• Cookies can be stored in an airtight container up to 3 days.
• If the cookies are too soft, refrigerate for 30 minutes before baking

These sugar cookies are buttery and tender-crisp. They are made for cutting out into shapes as they hold their shape very well when baking. The dough is super easy to roll out and cut – and you only need just 5 basic ingredients. The cookies won’t puff up, so they are perfect for icing and decorating as you please. They are wonderful to serve plain too. NO SPREAD. NO PUFF. JUST 5 INGREDIENTS!
You'll need:
• 1 cup (225g) salted butter (room temperature)
• 1 1/2 cup (180g) powdered sugar/icing sugar
• 1 large egg (room temperature)
• 1 1/2 tsp vanilla extract
• 3 1/4 cup (422g) all-purpose flour
Cool completely. Serve. Enjoy!
:: HELPFUL HINTS ::
* Number of cookies will depend on cut out size and how thick you roll your dough. For thinner cookies, roll out your dough to 1/8 and 1/4 for thicker cookies.
* Bake thinner or smaller cookies for 8-10 minutes.
* Measure your flour correctly. Adding too much flour will result to crumbly texture or sandy taste when baked. Fluff the flour in the container before scooping it out. Lightly spoon the flour directly into the measuring cup until it mounds well above the top of the measuring cup. Using the back of the dinner knife (non-serrated side is facing the flour), sweep the knife over the top of the cup to remove the excess flour.
* Let your cookies cool completely before frosting them. If they are not cool, the icing will melt.

With a slightly crisp on the outside, soft on the inside, buttery crumb, these cookies taste great on their own, or even better when packed with sprinkles and dipped in chocolate!
PRINTABLE RECIPE :
Ingredients
1 cup unsalted butter softened 226g
1/2 cup sugar 100g
1/4 cup light brown sugar tightly packed (50g)
1 large egg yolk
1/2 teaspoon salt
1 teaspoon vanilla extract
1/4 teaspoon almond extract optional
2 1/4 cups all-purpose flour 295g
2 1/2 Tablespoons colorful Nonpareils optional
Instructions
00:00 Introduction
00:15 Combine butter and sugars in a large bowl (or in the bowl of a stand mixer) and use an electric mixer to beat until creamy.
Add egg yolk and stir well.
Add salt, vanilla extract, and almond extract (if using). Beat until well-combined.
01:08 With mixer on low-speed, gradually add flour until completely combined. Dough may be crumbly, if needed use a spatula to scrape the bottom and sides of the bowl and work the flour into the dough.
01:37 Add nonpareils (if using) and fold into dough (try not to over-work it at this point as nonpareils may bleed).
02:05 Divide dough into 2 parts and transfer each part onto a sheet of wax paper. Work dough into a 2 wide log shape (I like to use the wax paper to help do this, see video for reference) and transfer to the refrigerator to chill for at least 2-3 hours.*
03:19 Once dough has chilled, preheat oven to 350ºF (175ºC) and line a cookie sheet with parchment paper.
Remove one cookie dough log from the refrigerator and use a sharp knife to cut into 1/4 slices.
Place slices on prepared cookie sheet about 1 apart and bake on 350ºF (175ºC) for 10-12 minutes or until edges are just beginning to turn golden brown.
Allow to cool on baking sheet before serving. If desired, dip cooled cookies in chocolate and top with additional sprinkles.
