How To make Sirloin Citrus Salad
BARB DAY:
1 lb Top sirloin steak; 1" thick
- boneless 1 tb Olive oil
4 c Romaine; torn in bite-size
- pieces 2 Oranges; peeled, separated
- into segments 1/4 c Walnuts; toasted
Strawberries; optional, - sliced CItrUS VINAIGRETTE:
2 tb Orange juice
2 tb Red wine vinegar
2 ts Honey
1 1/4 ts Dijon mustard
Preparation time: 24 minutes Prepare the Citrus Vinaigrette by thoroughly combining all ingredients. Makes about 1/3 cup. Prepare the salad: Cut the beef into 1/8" strips; cut each strip in half. Heat oil in a large nonstick skillet over medium high heat. Stir fry beef (1/2 at a time) 1 to 2 minutes. Remove with a slotted spoon; season with salt, if desired. Toss lettuce, beef and oranges in a large bowl. Sprinkle with walnuts and drizzle with the Citrus Vinaigrette. Garnish with strawberries, if desired. Serve immediately. Serving suggestions: Sesame bread sticks. Source: Beef Industry Council

BETH'S THAI BEEF SALAD RECIPE
Serves 4
INGREDIENTS:
Wet Rub:
2 lb Sirloin Steak
3 tsp (15 ml) grated ginger
3 garlic gloves, minced
zest and juice of 1 lime
2 tbsp (23g) brown sugar
1 tbsp (15 ml) of sweet chili paste
1 tbsp (15 ml) soy sauce (not low sodium)
¼ tsp (1.25 ml) red pepper flakes
1 tbsp (15 ml) cilantro
For Dressing:
Juice of 2 limes
1 tbsp (15 ml) of sweet chili sauce
2 tsp (10 ml) of Thai fish sauce
1 clove garlic, minced
2 tsp (10 ml) grapeseed oil, or other non-flavored oil
For the salad:
2 ripe mangoes, cut into chunks
1 shallot, sliced thinly
1 cup (150 g) cherry tomatoes, sliced in half
¼ cup (60 ml) chopped herbs (mint, basil cilantro)
1 carrot, peeled with a vegetables peeler into thin ribbons
2/3 cup (100 g) peanuts
5 oz (140 g) of baby lettuce mix
METHOD:
In a small bowl combine the ingredients for the wet rub. Mix until combined.
Coat each side of the steak with the rub on both sides and refrigerate for at least 1 hour.
Prepare the dressing by adding the lime juice, chili sauce, fish sauce and garlic. Whisk to combine. Then slowly add the grapeseed oil until combined with the rest of the ingredients and a dressing is formed. Leave at room temperature until ready to serve.
Grease grill with oil or grilling spray. Heat grill to medium high. Remove beef from fridge and brush off rub with a paper towel.
Grill beef 5-7 minutes on each side until medium rate or 145F with a digital meat thermometer. Allow steak to rest.
Place the lettuce in a large bowl and add the mangoes, shallot, tomatoes, herbs, carrots and peanuts.
Slice steak against the grain for maximum tenderness. Place in salad, add dressing and toss.
Pile high on square plates and serve!

INGREDIENTS:
¼ cup of low sodium soy
2 tablespoons of peanut oil
1 package of Uncle Dan's Chipotle Ranch Seasoning
1 tablespoon of curry powder or paste*
1 pound of lean beef sirloin tip sliced into 1/8’ strips*
Bamboo skewers soaked in water
Thai peanut sauce*
*Curry can be found in powder or paste form.
*You can use any type of meat such as lamb, chicken, turkey, pork.
*You can buy pre-made Thai peanut sauce
INSTRUCTIONS:
1. Place all ingredients, except the meat, in a medium-size bowl.
2. Whisk until well blended then add your meat. Cover and let marinate for at least 30 minutes. The longer it marinades the more it allows the flavors to penetrate into the meat so you can do this the night before if you so choose to.
3. Preheat broiler or grill.
4. Thread meat onto skewers.
5. Pour the remainder of the marinade into a saucepan and bring to a boil, turn down to medium-low heat and cook for a few minutes then remove from heat. Use this to baste the meat with.
6. Place skewers under a broiler or on the grill at medium heat keep a very close eye and turn skewers frequently. Baste with the leftover marinade.
7. Cook for 6 minutes or until your desired doneness.

Use this beef marinade when you aren't splurging on prime-grade steaks. It works great on any cut of beef suitable for grilling!

Salads don't always have to be rabbit food. Kick it up with seared Sirloin and grilled Mango, grilled Minneola Tangelo and a great homemade vinaigrette (video soon).
We used Tsang's stir fry oil and Nebraska Bison's steak seasoning to produce a fantastic salty bark on a seared 2 1/2 pound Sirloin.
Salad never tasted so good!
