How To make Citrus Grain Salad
2 lg Naval oranges
4 c Cooked grains, such as
- brown rice, barley or - kamut 1 tb Grated orange zest
1/3 c Fresh parsley, minced and
- tightly packed 1 c Carrots, shredded
1/2 c Celelry, finely chopped
1/3 c Raisins or currants
2 tb Olive oil
2 tb Safflower or canola oil
1 tb Wine vinegar
3 tb Lemon juice, fresh squeezed
1/2 ts Sea salt or to taste
Freshly ground pepper Lettuce or radicchio leaves Grate 1 tablespoon zest from oranges (grate with gentle pressure to remove only the colored part). Set zest aside. Peel oranges and separate into sections. Set aside about 8 sections for garnish and coarsely chop remainder. Combine grains, orange zest, chopped oranges, parsley, carrots, celery and raisins in large bowl. For dressing, combine oils, vinegar, lemon juice, salt and pepper to taste in food processor or jar. Pulse briefly or shake well to blend. Pour dressing over grain mixture and toss until thoroughly blended. Taste and add more salt or lemon juice, if needed, to perk up flavors. Serve on a bed of lettuce leaves and garnish with reserved orange sections.

1½ cup cucumber
1½ cup cherry tomatoes

INSTRUCTIONS

Greek Grain Salad Recipe - Cypriot style with Blackcurrant and Pomegranate
This Cypriot Grain Salad, originally by George Calombaris, has featured at our Christmas table for the last 12-15 years. When I first started making it, the children were very young and time was always of the essence - so I took a few short cuts and I also did a little pre-prep. I toasted the nuts the day before I made the salad. This really helped on Christmas Day, as it saved me 30 minutes of pan-watching and nut-tossing. I also used fine bulghur instantly cooked with boiling water, and canned lentils, rather than cooking the freekeh and French lentils from scratch, as the original recipe called for.
As I have made the salad over the years, I have modified ingredient quantities. I have doubled the nut and blackcurrant quantities and I have learned a few tricks to truly perfect this salad.
The children are all grown up now and they even help me make the salad, so we make it with the dried freekeh and dried French lentils, but no matter which way we make it, it is still a hit at our table.

0:10 Make 50g silvered almonds, 60g pumpkin seeds, 70g pine nuts brown on medium heat
0:20 Once browned transfer to large plate to cool completely
0:30 combine 100g dried blackcurrants with 65g capers in vinegar/brine and allow to sit
0:40 180g freekeh plus water with 100g dry french lentils plus water and boil until al dente
0:50 Freekeh cooked ahead of the lentils and drain, strain and spread freekeh across a plate

1:16 Cut top and tail of pomegranate and cut lightly into ridges of pomegranate

1:58 Add 40g chopped parsley, 75g chopped coriander, cooled nuts and pomegranate arils
2:08 Combine well and add 3 - 4 tbsp EVOO and 1.5 - 2 tsp salt
2:18 Add lemon juice from 1 - 2 lemons and mix well
2:28 Pretty up the bowl and serve !
2:38: Tip - short on time - canned lentils, fine bulghur cooked instantly in hot water
2:48 Strain, rinse and drain 2x400g canned lentils
3:02: 1.5 cups of fine bulghur and 3 cups of boiling water
3:12: Mix well and leave for 5 minutes
3:24: Fluff with a fork and transfer to a large plate and leave to cool completely
3:34 Use 3/4 of the lentils and bulghur
