How To make Scottish Oat Scones
2/3 c Butter, melted*
1/3 c Milk
1 ea Egg
1 1/2 c All-purpose flour*
1 1/4 c Quick Quaker Oats, uncooked
1/4 c Sugar
1 T Baking powder
1 t Cream of tartar
1/2 t Salt
1/2 c Raisins or currants*
(My comment: Preheat oven to 425 F. I suggest you plump the raisins.) (I vary the items marked *) Add butter, milk and egg to combined dry ingredients; mix just until dry ingredients are moistened. Stir in raisins. Shape dough to form ball*; pat out on lightly floured surace to form 8-inch circle*. Cut into 8 to 12* wedges; bake on greased cookie sheet in preheated hot oven (425 F.) 12 to 15 minutes or until light golden brown. Serve warm at breakfast or brunch with butter, preserves or honey, as desired. Made as above, with BUTTER, these are absolutely wonderful! The buttery aroma is to die for! However, I seldom make them that way because of the cholesterol and because my wife and I almost always use whole wheat flour.

Traditional Irish Scones - EASY Home Baking Recipe!
Nothing beats a good scone and enjoyed still warm from the oven with butter and jam, it’s one of life’s finer pleasures. This recipe works a treat and can be adapted with whatever flavour combinations you fancy or simply stick to the classic.
Ingredients (US & METRIC):
500g/ 4 cups self-raising flour, plus extra for dusting
120g / 1 stick butter, chilled
1 tsp baking powder
250ml/ 1 cup milk, plus extra for brushing
1 large free-range egg
100g/ ½ cup currants
3 tbsp sugar

I hope you're all having a great day so far....here's a quick and easy recipe for Scottish oatcakes! These are lovely with a bowl of hot cream of tomato soup...simply top the oatcakes with a wee bit of butter and the cheese of your choice :) They are also really nice with a sweet topping such as honey. I used:
40ml (3 Tablespoons) Water
1 Teaspoon of salt
115g (1/2 cup) Oatmeal (you could use rolled/porridge oats if you like..for a rougher oatcake)
55g (1/2 cup) Plain/all purpose flour
45g (0.20 cup or 3 Tablespoons) Unsalted butter
1 Teaspoon baking powder

Today I'm going to show you how to make blueberry scones.
These healthy scones are made with less butter than traditional, and still come with flaky and soft texture.
Oatmeal scones are packed with fiber and protein, and they're great for breakfast.

BLUEBERRY SCONES RECIPE
(makes 8 wedges)
Ingredients:
1.5 cups ground oats or oat flour (150g)
1/2 cup spelt flour (65g)
2 tbsp tapioca starch or cornstarch
2 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
3 tbsp butter (45g)
1/2 cup Greek yogurt (120g)
3 tbps honey or maple syrup
1 small egg
1 cup blueberries (150g)
NUTRITIONAL INFO (per piece):
195 calories, fat 6.7g, carb 29.5g, protein 5.6g
Preparation:
Place a piece of butter in a freezer for 15 minutes.
In a mixing bowl, add the dry ingredients, ground oats, spelt flour, cornstarch, baking powder, baking soda and salt, mix to combine.
Grate your cold butter using a box grater over the dry mixture, gently stir with a wooden spoon.
Add the blueberries and toss to combine.
In a small bowl, mix together Greek yogurt, honey and egg.
Pour the wet ingredients over the oat mixture and genly stir until the dough starts to form, no more than that.
Transfer the dough to a floured work surface and press couple of times in order to stick together and roll into a 10 inch or 25cm disc.
Cut the dough into 8 equal wedges, transfer to a lined baking tray and chill in the fridge for 20-25 minutes.
Brush with an egg wash or milk and bake at 375F (190C) for 12-14 minutes.
Let it cool for 15 minutes and serve as it is, or drizzle with Greek yogurt glaze.
Enjoy!
GREEK YOGURT GLAZE:
1/4 cup Greek yogurt
1-2 tsp honey
1-2 tsp lemon juice

Top tip - make an extra big batch and freeze the cut out dough. Then whenever you’re feeling peckish pop in the oven and cook until golden and warm.
