How To make Santa Maria Salsa
29 oz (2 Cans) Tomatoes; OR
3 1/2 c Fresh Tomatoes; Peeled And
Chopped 1/2 c Celery; Chopped
1/4 c Onion; Chopped
1/4 c Green Pepper; Chopped
1 1/2 ts Salt
1 ts Prepared Horseradish
1 tb Vinegar
1 tb Sugar
1 tb Worcestershire Sauce
1 Pickled Jalapeno; Minced OR
To Taste Finely chop the canned tomatoes with scissors and mix with the other ingredients. Turn into a bowl or jar and cover tightly and refrigerate for several hours or overnight to blend the flavors. Serve at room temperature as a side dish with meats, beans, and barbecue. Any leftovers can be refrigerated for several days.

Santa Maria Tri Tip with Smoked Salsa
The town of Santa Maria, California, is home to one of America's most delicious barbecue specialties: black-on-the-outside, pink-on-the-inside, grilled beef tri-tip steak. This version from Chris Lee is an absolute must try.
Tri-Tip Ingredients
1 Tri-Tip
4 tbsp Kosher Salt
2 tbsp Coarse Ground Pepper
1 tbsp Granulated Garlic
Salsa Ingredients
8 Tomatoes
1 White Onion
2 Jalapeños
3 Cloves Garlic
3 Chipotle Peppers in Adobo Sauce
1 Lime (juiced)
1/2 cup Vegetable Stock
1 Bunch of Cilantro
Directions
First make your salsa. I recommend making this the day before to allow all ingredients to come together. Start by setting your smoker to 225°.
When smoker has come to temp place tomatoes, onion, garlic, and jalapeños on grate. Smoke for approximately 45 min.
After the ingredients have taken enough smoke take them of the smoker and place all salsa ingredients into a food processor or blender and blend to a consistency of your liking.
Next prep your Tri-Tip and set grill to 250°. Trim off the excess fat and silver skin and season with your salt, pepper, and garlic. The rub ingredients will be enough for a couple of not 3 Tri-Tips depending on size. Let the rub sit on the meat for 15-20 mins while grill is coming to temp.
Place your Tri-Tip on the top grate and smoke till it reaches an internal temp of 118°. Take it of the grill and bring grill up to 450°-500°. At this point I tent the meat with foil and place a cast iron pan in the grill to get piping hot. Sear both sides of the meat until the internal temperature reaches 135°-140°. I find the tenderness and the texture is perfect at this temperature. Let rest for 15-20 min.
Slice against the grain of the meat. ( I like to find where both parts of the grain meet and slice from that point.) Drizzle with smoked salsa and serve with garlic bread and a fresh salad. Enjoy!

Here is a tri tip recipe that is delicious! If you have been following our channel you know we love a open fire grilled santa maria tri tip recipe with the best tri tip marinade. Sassy produced a juicy marinade that flavors the tri tip perfectly. The Santa Maria style tri tip means open 'pit fire and I show you how you don't need a BBQ or fancy equipment to make your own fire pit grilled tri tip.
Santa Maria tri tip marinade:
1/4 cup teriyak
1/4 cup worcestershire sauce
1/4 cup soy sauce
1 tbsp kosher salt
We marinade our tri tip for 48 hours in a zip lock bag in the fridge.
We used Uncle Steve's Shake, South Texas Red to give that tri tip some additional flavor and crust just before we put it on the fire.
