Meat for 1 kg Salami:
35 % lean pork (350 g)
35 % lean beef (350 g)
30 % pork backfat (300 g)
Spices per 1 kg meat:
22.5 g salt
2.5 g Cure #2 (#1 also works)
3 g dextrose
2 g black pepper
2 g paprika
Casings: Depending on the size, you can use a 28/30 caliber pork casing or larger natural intestines (they have excellent properties, they do not peel off during maturation, they are impervious to fat and can be smoked).

Homemade sausage - it's very easy to cook it. We don't buy it in the store anymore. A very simple recipe for homemade sausage in a bottle. I take the meat, put it in the bottle and get the sausage.The main thing is to cook with love!
Cooking recipe and ingredients:
1. 900g of skinless chicken thighs.
2. Wash in a solution of 1 tbsp of baking soda and 500 ml of water.
3. Add 1 chicken breast.
4. 3 bay leaves, onion, peppercorns, salt.
5. Cook over low heat for 2 hours.
6. 350 ml of broth, 35g of gelatine.
7. Separate meat from bones.
8. Grate 1beetroot.
9. Squeeze out the juice.
10. Salt, pepper.
11. Diced 3 egg whites.
12. Place in the fridge overnight.

For the Salami
450 gms Chicken Breast
1/2 tsp Black Pepper (crushed)
1/2 tsp Ginger Powder
1 tsp Salt
1 tsp Sugar
1 tsp Red Chilli Powder
1 tbsp Fresh Cream
100 ml Cold Water
1 tsp Oil
For Steaming the Salami
Water (as required)
Making Salami Sandwich
Bread Slices
Lettuce
For the Spread
2 tbsp Mayonnaise & Sriracha

About Salami
Salami is a sausage that first came from Italy. The name comes from the Italian 'salare' meaning to make something salty. The original salami was made from a mix of chopped pork and salt which was dried using air in a casing. Now there are many types of salamis made in some countries. Nearly all are seasoned with a combination of herbs and spices in addition to salt.
Salamis are now sometimes smoked or cooked before air drying. Some kinds are made of beef while others mix beef and pork. Most, if not all Italian salamis have garlic in them, but few German kinds do, for example. Some, like a few salamis from Spain, include paprika or chili. The difference between some types is in how coarse or fine the meat is chopped. Some light salami might add turkey or chicken to reduce both fat and calories. Many salamis are named after the city or region where they come from. Some examples are Arles, Genoese, Hungarian, and Milano salamis.
