How To make Saganaki (Fried Cheese)
Karen Mintzias 1/3 lb Kefalotyri or kasseri cheese
2 tb Butter
1 Lemon (juice only)
Cut the cheese into bite-sized cubes. Melt the butter in a "saganaki" (or another frying pan), and fry the cheese on all sides until crusty and chestnut colored. Ingredients
- 150g Greek kefalograviera, 1cm thick
- a bowl of water
- plain flour
- extra virgin olive oil, for frying
- Lemon, for serving
Method
1. Dip the cheese into a bowl of water.
2. Lightly coat the cheese with flour and shake off the excess flour. The flour creates a nice golden crust when the cheese is frying.
3. Heat a heavy based pan or a non stick pan over medium heat until it’s very hot. Drizzle some oil and heat until hot. Add the cheese and fry for about a minute on both sides until it’s lightly golden. Remove from pan and serve immediately. Squeeze fresh lemon juice over the saganaki and enjoy.
