How To make Romertopf Beef In Red Wine
2 md Onions
sliced
4 md Carrots, peeled :
sliced
1/4 " thick
1 c Ham julienned
3 lb Beef chuck :
cut in 1"
Cubes and 3 Cloves garlic minced
1 t Thyme :
dried
1/2 ts Rosemary crumbled
1/2 ts Marjoram
1 Bay leaf
1 tb Salt
1/4 c Brandy
1 1/2 c Red wine
1 cn (1 lb)
W/ liquid Tomatoes, canned :
chopped
Combine all ingrediants except tomatoes in large bowl. Refrigerate covered 2-3 hours. Soak top and bottom of a 3 1/4 quart (3.25 L) clay cooker in cold water about 15 minutes and drain. Transfer beef mixture to cooker. Add tomatoes with liquid. Place covered cooker in cold oven. Set oven at 425 F/220C. GET THE RECIPE:
5 pounds any combination of chuck, rump & shank
8 oz pork belly or bacon
1 onion sliced
2 cups red wine - enough to cover the meat
(you could use 1/2 wine & 1/2 stock)
1 head of garlic
4 bay leaves
1/2 tbsp black pepper
1 tbsp allspice
1/2 tbsp cloves
3 tbsp tomato paste
1/3- 1/2 tsp salt per pound of meat (for 5# meat
add about 2-2.5 tsp salt)
1. Cut the meat into about 8 to 12 ounce pieces. (so you can layer the pieces in the pot)
2. Salt the meat about 1/3- 1/2 tsp per pound.
3. In a 5-6 quart (liter) roasting oven safe pot. Layer the meat, pork belly, spices, tomato paste and onions.
4. In a 350°F (177°C) bake for about 4 to 6 hours) when done, you should easily be able to pull apart the meat with just two forks. (the meat will be tender after 4 hours, from 4-6 hours it will be more tender/ pull apart easier- closer to 6 hours shredable like pulled pork) Cook it to your desired preference.
5. You could easily make this dish a few days ahead of time. Serve with potatoes, rice, or bread.

Osso Buco of Veal Braised in Römertopf / Clay Cooker w. White Wine - Recipe # 113
Easy to make veal osso buco cooked in a Römertopf, which is a German clay cooker. An amazing and lighter version of the Italian dish as we make it with white wine. We serve on fresh pasta and with the infamous Italian gremolata on top!
Ingredients for 4 persons:
2 kg. / 4 pounds osso buco (incl. bone and marrow)
2-3 dl all purpose flour
3 onions, cut into wedges
3 carrots
3 branches of celery
5 cloves of garlic
2 cans chopped tomato w. juice
1/2 liter white wine
1 tbsp dried thyme
1-2 bay leaves
neutral tasting oil (e.g. canola)
salt & pepper
Gremolata: 1-2 cloves of garlic, a handful of parsley and the zest of a lemon
The osso buco cooks for 4 hours at 150 deg. C / 300 deg. F.
Serve e.g. on fresh al dente cooked pasta
