RUSTIC ROSEMARY GARLIC BREAD: Artisan Bread Anyone Can Make
I love a good artisan bread, and this Rustic Rosemary Garlic Bread has got to be one of my all-time favorites. You don't have to be an expert baker to make it, just follow along as I explain every step in this video. Read on for the recipe.
Rustic Rosemary Garlic Bread
2 1/2 cups of bread flour (you can substitute all purpose flour but allow for a longer rise time)
1 packet of active dry yeast (7 grams or 2 1/4 tsp.)
1 cup warm water (100-110º)
1 Tbsp. sugar
1 1/2 tsp. salt
1 tsp. garlic powder
1-2 Tbsp. chopped fresh rosemary
3 Tbsp. olive oil
half to a full head of roasted garlic
*To roast garlic, chop off top of garlic head, drizzle olive oil onto garlic, season with salt, put top back on, wrap in aluminum foil and bake in oven at 400º for 40 minutes.
Proof yeast by mixing together dry active yeast and sugar in a small bowl. Add in warm water and stir briefly. Allow to stand for 10 minutes. Yeast should activate and become frothy on top, if not, your yeast has expired and will need to be replaced.
In larger, separate bowl, mix together dry ingredients: flour, salt, garlic powder, and chopped rosemary. Create a well in the middle of the bowl and set aside.
Add olive oil to small bowl with activated yeast and stir, then immediately pour into larger bowl with dry ingredients. Use a rubber spatula to combine dry and wet ingredients together, then switch to using your hands to press it all together. Dough will be tacky.
Sprinkle a light dusting of flour over clean dry surface. Transfer dough on top of flour. Add roasted garlic and work it into dough using your hands. Knead until garlic is evenly distributed and you can form dough into a ball.
Lightly grease the same large bowl you used earlier with olive oil and drop the dough ball into it. Cover with a kitchen towel or plastic wrap and let dough rise until it has doubled in size. This should take anywhere from 1 to 3 hours, depending on where you live and what kind of flour you used.
When dough has doubled in size, punch down, transfer and lightly to flat surface that has been dusted with flour, and knead lightly to form ball. Place an oversized sheet of parchment paper into a bowl so that the paper is larger than the bowl, drop dough ball into the parchment-lined bowl, (cut a slit on top if you'd like) cover with a kitchen towel, and let rise a second time for approximately 30-45 minutes.
Meantime, preheat the oven with an empty dutch oven in it at 425º. (If you don't have a dutch oven, preheat oven to 375º)
Once dough has risen a second time and dutch oven is preheated, remove lid with pot holder, then use the parchment paper as handles to carefully drop dough into the dutch oven without burning yourself. Put lid back on with pot holders and place in oven to bake for 30 minutes covered. After 30 minutes, remove lid and decide if you want to let it bake uncovered a few minutes longer to achieve desired level of golden brown. (Keep an eye on it, because it won't take long.)
When you take the bread out of the oven, use the parchment paper to take it out of the dutch oven and let bread cool before cutting into it. Enjoy!

The Best Garlic Bread Recipe made with Roasted Garlic & Parmesan

Ingredients
1 loaf of bread
4 oz butter, softened
3-4 tablespoons olive oil plus more for roasting the garlic
3 head garlic
2 grated fresh garlic cloves
1/4 teaspoon salt or to taste
freshly cracked black pepper to taste
1 teaspoon dried crushed oregano
finely chopped parsley
1/2 cup grated parmesan cheese
Instructions
Preheat the oven to 350 °F, 180 °C.
Slice the tops of the garlic heads so that the cloves are exposed. 'Place the garlic onto a tray that has a piece of foil over it. (Read this post for more ways to roast garlic)
Drizzle lots of oil over the garlic and season with salt.
Wrap the foil over the garlic to create a package and roast on the center rack of the preheated oven for 30 minutes. Open up the package of foil and return to the oven. Roast uncovered for 15-20 minutes. The garlic cloves will begin to pop out of their skins and they will be golden and soft.
Remove the pan from the oven and set aside to cool until it's easy to handle. About 5 minutes.
Place the butter, grated garlic, and oregano into a bowl. Squeeze the garlic out and into the bowl. Remove any skins and discard. Mash everything together and season with salt. Add the oil from the garlic and add 1-2 tablespoons more and mix together.
Slice the loaf of bread in half lengthwise.
Slather the cut sides with all of the garlic butter. Top with parsley and sprinkle the tops with Parmesan cheese.
Bake on the center rack of the oven for 15-20 minutes.
Turn the broiler element on for a minute or two. keep a close eye so that it does not burn.
Remove from oven and let it rest for 3-5 minutes. Slice the bread and serve. Kali Orexi.

Freezer Instructions: The garlic bread can be prepared (not baked) and stored in a freezer-safe bag up to a month.

Garlic bread focaccia - voiceover
INGREDIENTS
GARLIC BUTTER
2 bulbs garlic
1 tbsp olive oil
100 g unsalted butter at room temperature
30 g chives finely sliced
50 g parmesan grated
salt and pepper
FOCACCIA
700 g bread flour
680 g lukewarm water (100 degrees F / 34 degrees C) 95% hydration
7 g dry yeast
12 g fine sea salt
1 tbsp honey optional
60 g extra virgin olive oil
4 tbsp garlic butter
INSTRUCTIONS
GARLIC BUTTER
Preheat oven to 160 degrees Celsius / 320 degrees Farenheit.
Using a sharp knife, slice the top off the garlic bulbs, about 2 – 3 cm down from the top to expose the raw cloves. Place the bulbs of garlic into the centre of an oven proof dish, drizzle with olive oil and season with salt and pepper. Bake for 1 hour.
Take the dish out of the oven and remove the garlic from the dish and set to the side. Allow to slightly cool until you are able to handle it. Using your fingers, squeeze the roasted garlic cloves out of their skin.
Place the garlic cloves, butter, chives, parmesan and pinch of salt and pepper into a food processor and blend. Alternatively, everything can be mashed together with a fork in a large bowl.
FOCACCIA
In a medium bowl, mix together the lukewarm water, yeast and honey with a whisk and leave to sit for 5 minutes or until the yeast has foamed. This will indicate that your yeast is active.
In a large bowl, combine the flour and salt and whisk together. Add the yeast water to the bowl with the flour and bring together with a wooden spoon or your hands until the flour and water is combined and there are no dry parts. The dough should be wet and sticky. Cover with plastic wrap or a damp tea towel and leave to sit for 10 minutes.
Uncover the dough and begin to stretch and fold. To do this, wet your hands, then take a section of the dough and stretch it up and fold it onto itself on the opposite side. Rotate the bowl and repeat this step three more times until you have gone all the way around the bowl. Cover and leave to rest for 10 minutes.
Repeat the stretch and fold method until a neat ball has formed.
In a clean bowl, drizzle 20g of extra virgin olive oil all around the sides and into the bottom. Transfer the dough to the oiled bowl and cover very well with plastic wrap. Leave to rest in the fridge for a minimum of 18 hours and maximum of 72 hours. This is proof 1.
Prepare a baking tin (34cm x 23cm x 5cm) by greasing it with 20g of extra virgin olive oil. Transfer the proofed dough to the oiled baking tin. Using your fingers, stretch the dough out slightly into a rough rectangular shape. There is no need to stretch the dough out to the edges of the pan as the dough will rise and spread. Cover the tin with a damp tea towel and leave the dough to rise in a warm area of your house for 2 - 3 hours. If your dough is uncovered there is risk of too much air getting into the dough and creating a dry and crusty layer on top.
Preheat the oven to 200 degrees C / 390 degrees F
Melt 4tbsp of garlic butter in the microwave or on a low heat on the stovetop.
Once the dough has risen, use your fingers to dimple the dough. Drizzle the dough with the garlic butter and 1 tbsp of olive oil. This will help the crust of the dough get golden and crispy when baking. Finish off with a sprinkling of flakey sea salt. Bake for 30 minutes or until the dough has developed a golden crust on top.
Let the bread slightly cool before removing it from the baking tray. Place onto a wire rack and leave to rest for 30 minutes before slicing into it.
