Reuben Casserole
REUBEN CASSEROLE! Layers of corned beef, sauerkraut, bread, swiss cheese and Thousand Island. If you love a good reuben sandwich, you will be OBSESSED. Recipe below!
INGREDIENTS:
1-lb can sauerkraut, drained
1/2 cup chopped onion
1/2 cup fresh parsley, chopped
2 tsp. caraway seed
3 cups Swiss cheese, shredded
1 cup Thousand Island dressing
1 lb. corned beef
8 slices rye bread, cubed
1/2 cup butter, melted
INSTRUCTIONS:
1. Preheat oven to 375 degrees
2. Toss bread cubes with melted butter in a bowl
3. In separate bowl, combine sauerkraut, onion, parsley and caraway seed
4. In a 9x13 baking dish, layer half of the bread cube/butter mixture on the bottom
5. Bake for 10 minutes; remove from oven
6. Layer remaining ingredients in this order: sauerkraut mixture, swiss cheese, Thousand Island dressing, corned beef, swiss cheese, sauerkraut mixture, Thousand Island dressing, swiss cheese, remainder of bread cubes (refer to video for layering)
7. Bake for 35 minutes
8. Drizzle with Thousand Island and parsley and serve!
If you'd like to do this in an 8x8 square baking dish, you can halve all ingredients.

How to Make a Crazy Good Reuben Casserole
All the crazy goodness of a reuben sandwich, but in an easy to make and delicious Reuben Casserole. Layer marbled rye bread, corned beef, sauerkraut, 1000 island dressing, and Swiss cheese in a baking dish and bake until hot, crispy, and melty. Ideal for a comforting and homey lunch or dinner.

Kamado Joe Reuben Casserole
This week, I decided to take a grocery store variety corned beef brisket, give it some smoke, finish it in a beer braise, and then turn it into something fun to eat.... a Reuben Casserole! Give this a try! Here's the recipe:
8 oz egg noodles, cooked to package instructions
8 oz diced corned beef or pastrami
2 cups shredded swiss cheese
16 oz sauerkraut, drained and rinsed
1 tsp caraway seed, optional
1/2 cup russian or thousand island dressing
1/2 cup milk
1 tablespoon yellow mustard
2-3 slices of rye bread, made into crumbs
2 tablespoons melted butter
Preheat your grill to 350°F.
Combined the noodles, corned beef, cheese, sauerkraut, and caraway seeds in a mixing bowl and then spread into a greased 9x13 baking dish. Combine the dressing, milk, and mustard, and then spoon on top of the noodle mix. Toss the bread crumbs in the melted butter and spread across the top of the casserole.
Cook on the grill for 30-35 minutes until the bread crumb start to brown.

INGREDIENTS
1 pound Deli Corn Beef-chopped
1 Cup Sauerkraut-drained
2 Cups Shredded Swiss cheese
Dressing:
1/2 Cup Mayonnaise
4 Tablespoons Ketchup (sugar free for keto)
2 Tablespoons Minced white onion
2 teaspoon Granular Sweetener (My favorite brand on Amazon (affiliate link)
2 teaspoon Dill Pickle Relish
2 teaspoon White vinegar
INSTRUCTIONS
Pre-heat the oven to 400F.
In a small mixing bowl, combine the mayo, ketchup, onion, sweetener, pickle relish and vinegar. Set aside.
Spray the inside of a 9x13 casserole dish with cooking spray. Spread the corned beef in the bottom of the dish.
Spread the drained sauerkraut evenly on top of the corned beef, followed by the sauce, and finally the shredded cheese.
Bake in the oven for 20 minutes.
Serve.
