One of our all-time favorite deli sandwiches...in a casserole! This delicious dish is so easy to make, and can even be made the night before for a stress-free brunch.

Reuben Sandwich Casserole
Serves 6-8
Ingredients
•6 slices rye bread, divided
•1 pound pastrami or corned beef, thinly sliced or shaved
•1 (14.5 oz.) can sauerkraut
•4 cups Swiss Cheese, shredded
•1 cup dill pickles, chopped
•1 cup milk
•1/3 cup Thousand Island dressing
•1/4 cup mustard
•3 large eggs
Directions
1.Preheat oven to 350º F and lightly grease a 9×11-inch baking dish with butter or non-stick spray.
2.Take four pieces of rye bread and cut them into cubes. Place remaining bread in food processor, pulse until you’ve got fine breadcrumbs and set aside.
Spread cubed bread out along the bottom of your baking dish, then cover with 1/2 of pastrami. Top beef with sauerkraut, pickles, and 2 cups cheese. Pour wet ingredients evenly over the casserole, then top with breadcrumbs.
Place baking dish in oven and bake for 40-45 minutes, or until mixture is bubbly, top is browned and center is set. Remove from oven and serve hot.

Reuben Casserole
This is a super quick & easy recipe to throw together with leftover corned beef!
This is a family favorite I should make more often. Because I know everyone loves it and corned beef is on sale now, I got 2 and tossed them in the crockpot overnight. The next day I took them out to cool while I went about my day and threw the casserole together at the end of the day.
I suggest making a double batch or making one and using the other corned beef for another meal.
Reuben Casserole
Serves 6-8 (doubles nicely)
4 ounces cream cheese, room temperature
1/2 c finely chopped onions
Half (12 oz) jar of thousand island dressing (I used Marie’s)
16oz cooked and shredded corned beef
8oz sauerkraut, drained
5 oz bag of shredded Swiss cheese
1 tsp caraway seeds (optional)
Preheat oven to 350. Grace an 8 or 9 inch square pan.
In a large bowl, mix the cream cheese, thousand island dressing and onions together. Add the corned beef, sauerkraut, Swiss cheese, caraway seeds and mix well.
Spoon everything into a prepared dish and bake for 20 to 22 minutes until bubbly and browned on top!
Serve with a relish tray of pickled vegetables, crudités and deviled eggs or alongside cauliflower or broccoli mash.

REUBEN CASSEROLE! Layers of corned beef, sauerkraut, bread, swiss cheese and Thousand Island. If you love a good reuben sandwich, you will be OBSESSED. Recipe below!
INGREDIENTS:
1-lb can sauerkraut, drained
1/2 cup chopped onion
1/2 cup fresh parsley, chopped
2 tsp. caraway seed
3 cups Swiss cheese, shredded
1 cup Thousand Island dressing
1 lb. corned beef
8 slices rye bread, cubed
1/2 cup butter, melted
INSTRUCTIONS:
1. Preheat oven to 375 degrees
2. Toss bread cubes with melted butter in a bowl
3. In separate bowl, combine sauerkraut, onion, parsley and caraway seed
4. In a 9x13 baking dish, layer half of the bread cube/butter mixture on the bottom
5. Bake for 10 minutes; remove from oven
6. Layer remaining ingredients in this order: sauerkraut mixture, swiss cheese, Thousand Island dressing, corned beef, swiss cheese, sauerkraut mixture, Thousand Island dressing, swiss cheese, remainder of bread cubes (refer to video for layering)
7. Bake for 35 minutes
8. Drizzle with Thousand Island and parsley and serve!
If you'd like to do this in an 8x8 square baking dish, you can halve all ingredients.

Classic Southern Reuben Sandwich Casserole

Ingredients

1 Tbsp butter

1 ¼ lb sliced pumpernickel bread or rye bread
3 C diced corned beef (about 1 lb)
3 C sauerkraut well drained
4 C shredded swiss cheese (about 1lb)
1 ½ C dressing (¾ C Russian Dressing, ¾ C Duke's Mayonnaise, salt & black pepper)
Blend
10 eggs
2 ½ C whole milk
2 Tbsp Dijon Mustard
Directions
Butter a 12-by-15-inch baking pan's bottom and sides. A layer of bread pieces should be placed on the dish's bottom. Add a cup of corned meat, cheese, and sauerkraut on top. Sprinkle salt and pepper on top after drizzling 1/2 cup dressing over it. Layering should be done twice more. Dijon Mustard, milk, and eggs should all be blended. Pour over the baking dish's layers. Over the top, add the final cup of cheese. Wrap in plastic and apply pressure. 1 to 24 hours should be spent cooling. For around 45 minutes (160°F), remove the cover and heat the oven to 350°F. 10 minutes should pass before serving.
