There are a few stews that are truly Puerto Rican classics, that everyone simply loves. This Habichuelas Guisadas is exactly one of those recipes. This is one of the first stews that my Dad ever taught me to cook. I have left this one unchanged from the way he taught me to make it because of how much of an impact it had on me and how much I enjoyed it. If you want to try a pretty simple sample of Puerto Rican cuisine this is a perfect recipe for you to dip that toe into the water.

Makes: 4 Servings
1 Tbsp. Oil
2 Tbsp. Sofrito ( here is a recipe - )
8 oz. Tomato Sauce
2 15 oz. Cans Kidney Beans, Drained and Rinsed
1-1/2 Cup Water
1 pckg. Sazon
1 Tbsp. Adobo
1/2 tsp. Garlic Powder
1/4 tsp. Oregano
Pepper
2 Tbsp. Pimento Stuffed Olives
1/2 lbs. Potatoes, Peeled and Chopped
Cooked Rice for Serving

How to make Butter Beans Gravy:
1. Today lets check out how to make butter beans masala. This is a very healthy dish as butter beans is rich in vitamin C which helps for growth and development of your body. This side dish best goes with chapathi or rottis and even with pulavs. Very easy to make.
2. Heat a pan and add a tbsp of oil to it. When the oil is nice and hot add a 1/4 tp of cumin seeds. Allow this to splutter. Then add few curry leaves and 1 green chilli cut into two. Then add 1 onion very finely chopped. Saute well until the onions turns transparent. Its been two minutes and the onions are nicely done, so go ahead and add 1 tomato finely chopped. saute until the tomato turns mashy.
3. After 2 minutes the tomato is nice and mashy, so lets now add the spices. 1/2 tsp of salt, 1/4 tsp of turmeric powder, 1/2 tsp of chilli powder, 1 tsp of coriander powder and 1/4 tsp of cumin powder. Saute well until the raw flavor of the spices goes off.
4. Now add 1 cup of butter beans. Mix well for 2 minutes and make sure the masala is well spread.
5. Now add 3 cups of water and mix it well. Allow this to come to a boil. Let this cook for 10 to 15 minutes, until the butter beans is completely done. You can also pressure cook for 3 whistles, but this method will definitely taste better. Give it a mix in between. Now the water has started to reduce, continue to cook until you get the perfect consistency.
6. The final consistency is totally optional. If you are serving this for chapth or rotti you can go with a semi gravy texture. If you are serving for pulav you can go with masala consistency. Now I have the perfect masala consistency so off the flame and sprinkle some chopped coriander leaves. Serve it nice and hot and enjoy with your family and friends.

Butter Beans: 1 Cup or 1/4 Kg
Oil: 1 Tbsp
Cumin: 1/4 Tsp
Curry Leaves: Few
Green Chilli: 1 Nos
Onion: 1 Nos
Tomato: 1 Nos
Salt: 1/2 Tsp
Turmeric Powder: 1/4 Tsp
Chilli Powder: 1/2 Tsp
Coriander Powder: 1 Tsp
Cumin Powder: 1/4 Tsp

Puerto Rican Style Beans
1 Can of beans (pink or red)
1 Chorizo Spanish style sausage
1/2 small onion
1 small potato
3/4 cup of tomato sauce
2 tbs oil
2-3 tbs sofrito
1 tsp ground oregano
1 tsp cumin
1 packet of Sazon
Water
In a saucepan heat 2 tbs of oil on medium-low heat (olive or canola)
Add chopped chorizo to the oil and fry until browned (5 minutes) Add minced onion and sauté until translucent. Add 3 tablespoons of Sofrito and the cumin, Sazon and oregano. Cook for a few minutes to marry all the ingredients. Add a splash of wine or water to deglaze pan. Add tomato sauce, beans (drained) and potato. Bring to a boil then cover and simmer on medium-low for 40 minutes or until potatoes are cooked through.
Server over rice.
