1 pound extra lean ground beef
1/2 cup chopped onion
1 cup long grain rice

uncooked
7 ounces water
3/4 teaspoon chili powder
1/2 teaspoon ground cumin
1/4 teaspoon cayenne pepper
15 ounces pinto beans, canned :

rinsed and drained
11 1/2 ounces tomato juice
4 ounces diced green chiles, canned -- undrained
Nonstick cooking spray
This hearty dish takes only minutes to put together Let your oven do the work while you prepare a fruit salad as an accompaniment.
Cook meat and onion in a large nonstick skillet over medium heat until meat is browned, stirring to crumble. Drain meat mixture into a colander, and pat dry with paper towels. Combine meat mixture with the next 8 ingredients, and stir well. Pour mixture into a 3-quart casserole coated with cooking spray. Cover and bake at 350 for 50 minutes. Stir. Cover and bake an additional 30 minutes or until rice is tender.
