Cajun Style Red Beans and Rice with Grilled Andouille Sausage
Red Beans and Rice Ingredients:
- 1lb red beans
- 1 smoked ham bone
- 32oz chicken stock
- 16oz water (add more as needed)
- 1 bell pepper
- 1 onion
- 2 celery ribs
- 4 cloves garlic
- 1 lb andouille sausage
- 1 lb smoked sausage
- 2 Tablespoons Malcom’s King Craw Cajun Seasoning (or your favorite Cajun seasoning)
- 1 cup dry long grain rice
Red Beans and Rice Directions:
1. Pick and rinse red beans. Place beans in large pot and add stock, water, and 1/2 chopped onion. Bring pot to boil and reduce heat to simmer. Cook for 1 hour 30 minutes adding water as necessary. Stir beans every 20-30 minutes
2. Dice onion, bell pepper, and celery; mince garlic; split sausages length wise.
3. Grill sausages over charcoal grill. Slice andouille into 1/2 moon shape slices.
4. Sauté vegetables in 1 Tablespoon olive oil for 3-5 minutes. Add garlic and cook for 1-2 minutes.
5. When beans are tender remove 1 cup of beans and mash with fork.
6. Add vegetables, sliced andouille sausage, and mashed beans to the pot. Season with Malcom's King Craw. Simmer for 30 minutes.
7. Prepare rice according to package directions.
8. Serve red beans over a scoop of rice garnished with a link of smoked sausage, green onion, and hot sauce.

Red beans and rice recipe
Place one bag of red kidney beans in a large size bowl
Remove the rotten/bad beans
Cover the beans in water and allow them to sit for at least 4 hrs
Chop up 2 stalks of celery, 1/2 green bell pepper, 1 onion, and 3 scallions
Chop up 2-3 smoked sausages or (andouille sausage)
Place a pot of medium heat and add 3 tbs of butter
Add your chopped vegetables and sausages to the pot
Add 1 tbs of minced garlic
Stir and allow the sausage and veggies to brown (it should take about 10 mins)
Once they are browned add 6 cups chicken broth. If you don't have any broth left over add water
Rinse and drain your red beans and add them to the pot along with 1 ham hock
Add your season: 4 tbs of creole season, 2 tsp of parsley, 1 tsp of Cajun season,1 tsp of black pepper, 2 bouillon cubes and 2 bay leafs
Stir in well and cover with a top
Allow the beans to simmer for approximately 2 1/2 hours or until as soft as you like them
Taste them once done and add additional season if you need too
Poor them over some boiled white rice

1 cup white rice
1 red and green bell pepper
2 stalks of celery
1 onion
1 lb andouille sausage
1 large smoked turkey leg or hamhock
1 tbsp cooking oil
dry oregano
1 tsp fresh diced thyme
smoked paprika
1 tsp better than bouillon chicken base
salt, pepper, garlic, onion powder, cayenne, cajun seasoning
3-4 cups chicken broth
green onion (garnish)
Directions:
Soak beans overnight in cold water (fridge).
In a medium sized pot add 2 cups water, cook rice according to package instructions; set aside.
Heat vegetable oil in a large Dutch oven over medium heat. Add sausage, and cook, stirring frequently, until sausage is lightly browned, about 3-4 minutes. Add onion, bell pepper and celery. Cook, stirring occasionally, until tender, about 3-4 minutes.
Stir in tomato garlic and oregano, thyme, chicken base, smoked paprika, cajun seasoning.
Stir in red beans, chicken stock, andbay leaf. Season to taste. Add whole smoked turkey leg. Bring to a boil; cover, reduce heat and simmer for about 1 hour, stirring every 15 minutes. Uncover; continue to simmer until reduced, an additional 15-20 minutes.
Using a wooden spoon or potato masher, mash beans until slightly thickened, if desired; season with salt and pepper, to taste.
Serve immediately, topped with rice and garnished with green onion, if desired.

Ingredients
2...15.5oz cans of red beans
3/4 cup chopped onions
1 TBSP minced garlic
1 cup water
3 TBSP bacon fat
1 1/2 tsp salt
1 tsp garlic powder
1 tsp onion
1/2 tsp black pepper
1 tsp cayenne
1 1/2 cups cooked white rice
1TBSP liquid smoke
1 TBSP sliced scallions (optional) as garnish
RECIPE
1. Chop 3/4 cup yellow onion
2. Mince 1 tablespoon fresh garlic
3. Rinse off the beans
4. Put half of your beans in a blender or food processor with One cup of water and purée.
5. Sauté the onions and garlic in the bacon fat until tender.
6. Add the remaining whole beans as well as the bean purée.
7. Add all the dry spices.
8. Add the liquid smoke and simmer for 20 minutes.
9. If the bean mixture is a little too thick add a bit of water. Refer to the video for the proper consistency.
10. Add the beans to the cooked rice and that’s it.
11. Garnish with sliced scallions (optional)

Instructions:
1) Line out all of your ingredients in bowls and chop up all of your veggies and sausages.
2) Add all of your ingredients to a 6 quart Crockpot/Slow Cooker, set on High for 6 Hours.
3) Cook Rice according to your package directions.
4) Serve Red Beans over the bed of rice of your choice. Top with Green Onions and or Fresh Parsley for garnish. Enjoy!
