How To make Ras Asfour(Lentil Soup)
1 1/2 c Yellow or orange lentils
-(go through them and pick -out stones) 1/2 lb Choice ground beef
1/3 c Chopped fresh parsley
1 t Salt
1/4 ts Pepper
2 ts Olive oil
1 Onion, sliced
1/2 c Shaarla, or vermicelli
-broken into pieces 1/3 c Lemon juice
Suhour ("the meal before sunrise") is usually good, stick-to-your-ribs food. Rinse lentils and drain, picking out any discolored ones. Combine with 5-6 cups water in a large kettle and bring to a boil. Lower heat and simmer for 20 minutes, skimming off foam as it forms on top. While the lentils are cooking, combine ground meat with parsley, salt and pepper. Using about a tablespoon of the meal mixture for each, form into small meatballs and chill until needed. Heat the olive oil and saute the onion until soft and golden. Reserve. When lentils are soft, mash them with the back of a spoon to thicken the soup. Add shaarla (or vermicelli) and meatballs. Cook 10-15 minutes longer, until meatballs are cooked through. To serve, divide onion slices among 6 bowls. Stir lemon juice into soup and ladle over onions. Makes 6-8 servings.

6 cups chicken or vegetable stock
1 (14-ounce) can fire-roasted diced tomatoes
1 1/2 cups (about 8 ounces) DeLallo whole wheat orzo pasta, or other whole wheat pasta
1/2 teaspoon dried thyme
1/4 teaspoon dried oregano
1/4 teaspoon dried rosemary
4 cups loosely-packed spinach
salt and black pepper
optional toppings: freshly-grated Parmesan cheese, crushed red pepper flakes

You will need :
Chicken
Chickpeas (I used cooked ones) about 200g
Mince beef 250g
Salt, pepper, ginger powder, ras al hanout, turmerci or also known as curcuma
1 big onion
Orzo pasta I used 500g
eggs 2 or 3
Recette Chorba. Très facile a réaliser et délicieuse. Version onctueuse.

250 g de viande de boeuf
3 cuillères a soupe de cheveux d'anges
une poignet de pois chiche
2 tomates
2 carottes
1 oignon moyen
2 échalottes
1 courgette
3 gousses d'ail
concentré de tomate 70 g
Un bouquet de persil/coriande
huile d'olive
Sel
poivre
coriandre
Ras el hanout
cumin
épice chorba
Un bouillon de poule

I asked my mother-in-law for the recipe of this soup and I tried re-creating it by basing some from her recipe and my husband’s retrospect. And from that, Pinays Kitchen version of a Delicious and Hearty Soup is made.
This Soup can be Vegetarian or Vegan. Just leave out the Beef when cooking, and use water instead of beef stock.

Ingredients: ????
- 1/2 lb Beef, medium cubes (If you want it Vegetarian, you can leave out the Meat)
- 2 Quarts Liquid (I used half beef stock, half water)
- 1 cup Red Onions (small diced)
- 1/2 cup Carrots (small diced/rounds)
- 1/2 cup Celery (small diced)
- 1/4 cup Parsley (roughly chopped)
- 3 cloves Garlic (chopped)
- 1 Tbsp Fresh Ginger (chopped)
- 2 cups Tomatoes, chopped (I used a can chopped tomatoes with the juices)
- 2 Cups Green lentils
- 2 cups Garbanzo beans or CHickpeas (I used can chickpeas)
- 1 tsp Ginger powder
- 1 tsp turmeric powder
- 1 tsp cinnamon powder
- 1 tsp cumin powder
- Salt and black pepper to taste
- Oil for cooking
- Hard boiled eggs and Pitted Dates for Garnish (It compliments the soup perfectly)
How I started my Channel;????????????
When the Pandemic hit Nashville TN, most of the businesses closed down to implement Social Distancing. And a lot of people got affected by that. I am one of them.
But I am alive and my family is healthy, so I decided not to dwell on it too much. Instead, I decided to continue cooking at Home (only this time, record myself doing it). ????
Despite of my anxiety on speaking in public specially not in my native language, I have to keep doing what I love to do. ????????????
Tho I couldn’t share my food to my family and friends for now, At least I get to inspire them to keep moving, keep smiling and keep living. ????????
With the help of my husband, I started making some cooking videos from my own Kitchen. I do the editing myself. Right now, it’s not a state of the art videos but we will keep trying to do what we can to produce a great show for y’all. ????
Because despite of all what’s happening around, we always have a choice. And we choose to stand and do something good. We fall sometimes, then we come back up even stronger. ????????

One Pot Polish Sauerkraut Soup
1.5 lb chopped Sauerkraut, slightly squeezed
4 smoked sausage of choice
2 medium carrots
2 medium onions
2-3 cups cubed potatoes
2-3 tbsp. tomato paste
2 tbsp. marjoram
1 tbsp. caraway seeds
3 small bay leaves
8 cups of chicken stock
Thickening Agent
3 tbsp. butter
3tbsp. Flour
Fry onion until golden. Add sausage and fry until golden. Add tomato paste and allow to stick slightly. Add spices and cook one minute. Add stock and remaining ingredients. Cook a half hour.
Cook thickening agent until golden and add to soup. Allow to cook a few minutes until the juice is thickened slightly.
