2 c FLOUR
2 ts BAKING POWDER
1/2 ts SALT
1/4 c EGG BEATERS
1/4 c SUGAR
1/4 c BUTTER OR MARGARINE, MELTED
1 c CHOCOLATE CHIPS
1 t CINNAMON
3/4 c SKIMMED MILK
PREPARE PAN BY GREASING WITH BUTTER, MARGARINE OR SOLID SHORTENING. IN A LARGE BOWL, COMBINE FLOUR, SALT, CINNAMON AND BAKING POWDER. IN A DIFFERENT BOWL, BLEND MILK, EGG, SUGAR, CHOCOLATE CHIPS AND BUTTER. ADD FLOUR MIXTURE ALL AT ONCE AND MIX ONLY UNTIL FLOUR IS MOIST. MIXTURE WILL BE LUMPY. SPOON MIXTURE IN TO PREPARED PAN. **** IF USING A brEAD PAN - BAKE FOR 50 TO 70 MINUTES AT 350 DEG F. OR UNTIL A PICK INSERTED IN THE MIDDLE COMES OUT CLEAN. **** IF USING MUFFIN CUPS - BAKE AT 400 DEG F. FOR 20 MINUTES. REMOVE FROM PAN IMMEDIATELY, COOL ON WIRE RACK. NOTE:: IF USING A brEAD OR LOAF PAN - LINE THE PAN WITH ALUMINUM FOIL TO MAKE REMOVING THE brEAD EASIER. MAKES 12 SERVINGS. Makes 12 jumbo or 18 regular muffins
Prep Time: 15 minutes
Cook Time: 30 minutes for jumbo, 20 minutes for regular muffins
Ingredients
Crunchy Streusel
½ cup (75 g) all-purpose flour
1/3 cup (70 g) granulated sugar
½ tsp ground cinnamon
¼ cup (60 g) unsalted butter, melted
Muffins
2 large, very ripe bananas
½ cup (115 g) unsalted butter, melted (still warm is OK)
½ cup (100 g) granulated sugar
½ cup (100 g) packed light brown sugar
2 large eggs
1 tsp vanilla extract
½ cup (125 mL) buttermilk
1 2/3 cups (250 g) all-purpose flour
1 tsp baking powder
½ tsp baking soda
¼ tsp fine salt
1. Preheat the oven to 375°F (190°C). Line one 12-cup muffin tin with XL tulip paper liners or 2 pans with 18 regular liners.
2. For the crunchy streusel, stir the flour, sugar and cinnamon together in a small dish. Stir in the melted butter – the mixture may seem paste-like at first, but as it sits it will become crumbly.
3. Mash the bananas well in a large mixing bowl. Whisk in the melted butter, granulated sugar and brown sugar. Whisk in the eggs and the vanilla, followed by the buttermilk. Sift in the flour, baking powder, baking soda and salt and whisk just until smooth.
4. Scoop the batter into the muffin tins and crumble the streusel on top of each muffin. Bake for about 20 minutes for regular muffins and 30 minutes for the XL muffins. Cool the muffins for 10 minutes in the tin before removing to a rack to cool completely.
The muffins will keep for up to 3 days in an airtight container.

Ingredients:
1¾ cups (220g) All-purpose flour
1/2 cup (100g) Brown sugar
2 teaspoon Baking powder
1/4 teaspoon Baking soda
1/4 teaspoon Salt
1/4 teaspoon Cinnamon
3/4 cup (130g) Chocolate chips
3 ripe medium Bananas
1/3 cup + 1 Tbsp (100ml) Vegetable oil
1 egg
1/4 cup (60ml) Milk
1 teaspoon Vanilla extract
Directions:
1. Preheat oven to 350F (175C).
2. In a large bowl stir flour, baking powder, baking soda, cinnamon and salt. Set aside.
3. In a separate bowl, mash the bananas, add sugar and stir until combined. add oil, milk, egg, vanilla and whisk until well combined.
4. Add flour mixture to the wet ingredients and stir until incorporated. add chocolate chips and stir.
5. Divide between 12 muffin cups. Bake for 17-20 minutes. Let cool.

Bake at 450F for 10 minutes; reduce oven temp to 325F, and bake for another 15 minutes or until almost firm.
2 cups all-purpose flour
¾ cup white sugar
1 tablespoon baking powder
½ teaspoon baking soda
1 cup fresh milk
1 tablespoon white vinegar
½ cup melted butter (salted)
1 pc whole egg
4-5 pcs chopped bananas
1 cup dark chocolate chips
Pinch of salt, if using unsalted butter
