Gluten free Low Calorie NAMA CUPCAKES!
Gluten free cake that has no Butter and oil but super anf moist Cake, I used beet sugar here instead of White sugar, Although i really want ot use o calorie sugar but its hassle to dissolve because most of calorie sugar is hard to dissolve unless you mix it with hot liquid.
Nama means is simlar to heavy cream.
In this cake we need:
8 size of muffin or you can use silicon cups.
60 gram Rice flour , 2teaspoon of Baking powder,60 gram Beet Sugar 1 Large egg (63gram~ )
100ml Nama Cream or heavy Cream or made in vegetable cream

1 overripe banana, mashed (about 130g)
过熟香蕉1个,约130克 (压成泥)
35g caster sugar 细砂糖
1 large egg 约66克的全蛋
1/4 tsp vanilla essence 香精
pinch of salt 一小撮盐
30g Plain Yogurt 原味优格
35g melted butter 溶化牛油
90g All Purpose Flour 面粉
1/4 tsp baking Soda 小苏打
1/2 tsp baking powder 泡打粉

HOMEMADE BANANA ICE CREAM RECIPE:
2 frozen bananas, cut into thirds
1-2 tablespoons unsweetened almond milk (or any milk you prefer)
1-2 teaspoons maple syrup, honey, or monk fruit
Pop bananas into a blender or food processor and blend until the bananas have a smooth and creamy consistency (just like ice cream). Depending on how powerful your blender or processor is, your bananas may clunk around a bit at the beginning BUT just give them a minute. Once they start to break down, they turn into this lovely, creamy treat.

If you want, you can skip the milk addition altogether, but I like to add a little in. I usually use just a tablespoon or two along with the maple syrup. Blend until thick and creamy. Enjoy!

Storage recommendation: If you happen to have any banana ice cream left over, simply store it in an airtight container in the freezer. It will keep in the freezer for up to 3 months. Before enjoying, thaw at room temperature until slightly softened.

Banana Bread Mini Muffins
My family LOVES Banana Bread Mini Muffins! I bake banana bread in some shape or form almost every week; it only takes a few minutes to whip up the batter! I always buy tons of bananas at the beginning of the week, and this recipe is the perfect way to use up any slightly overripe bananas. These mini muffins are ultra moist, not-too-sweet, and have a nice banana flavor. Your whole family is going to love them!
Banana Bread Mini Muffins (makes 48)
1 ½ c. all purpose flour
½ tsp. salt
1 tsp. baking soda
3 very ripe bananas
2 eggs
1 stick unsalted butter, room temperature
½ c. white sugar
¼ c. light brown sugar
½ c. plain yogurt
1 tsp. vanilla extract
Cinnamon Sugar topping—1/2 c. white sugar mixed with 2 Tbsp. cinnamon stored in an airtight container.
Preheat oven to 350 degrees. In a medium mixing bowl, whisk together the flour, salt, and baking soda. In a large mixing bowl, mash together the bananas and eggs. Add the softened butter, white and brown sugars, yogurt, and vanilla. Mix to incorporate. Add in the flour mixture and stir together just until combined. Spoon batter into greased mini muffin tins. Depending on how big your bananas are, you might have a little bit of extra batter, but for me this recipe makes about 48 mini muffins (bake the extra batter too!).** Sprinkle the top of each muffin with a pinch of cinnamon sugar. Bake at 350 degrees for about 10-12 minutes. Cool slightly before eating. ENJOY!!
**You can bake this recipe as regular sized muffins (bake for about 15-20 minutes) or a 9x5 loaf (bake for about 50 minutes to an hour).
