How To make Purple Plum Pie
4 cups fresh plums (about 1 1/2 pounds) -- sliced
1/2 cup sugar
1/4 cup all-purpose flour
1/4 teaspoon salt
1/4 teaspoon ground cinnamon
1 tablespoon lemon juice
1 unbaked deep-dish pastry shell (9 inches)
Topping: 1/2 cup sugar
1/2 cup all-purpose flour
1/4 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
3 tablespoons cold butter or margarine
In a bowl, combine the first six ingredients; pour into the pastry shell. For topping, combine sugar, flour, cinnamon, and nutmeg in a small bowl; cut in butter until the mixture resembles coarse crumbs. Sprinkle over filling. Bake at 375 degrees for 50-60 minutes or until bubbly and golden brown. Cover edges of crust during the last 20 minutes to prevent overbrowning.

Plum Crumble Cake Recipe
This plum crumble cake is the perfect dessert for family dinners and holidays. It's pretty easy to make, balanced in flavors, it’s not to sweet, and the most important thing, it goes wonderfully with a cup of tea or coffee.

Ingredients:
For the filling:
500 Plums
Lemon zest
3 tablespoons (37g) Brown/white Sugar
30g Cornstarch
For the crumble:
1¼ (125g) Rolled oats
1 cup (125g) Plain flour or whole wheat flour
1/2 cup (115g) Butter, softened
1/4 cup (50g) Brown/white sugar
1 teaspoon Baking powder
Pinch Salt
Directions:
1. Preheat oven to 180C (350F). Line the bottom and the sides of a 8-inch (20cm) round cake pan with parchment paper.
2. Prepare the filling: cut the plums in half, remove the pit, then cut each half into 3-4 pieces. Transfer the plums into a large bowl and add sugar, lemon zest and cornstarch. Mix well and set aside.
3. Make the crumble: in a large bowl, mix oats, flour, salt, sugar and baking powder. Add softened butter and rub with your fingertips until the mixture resembles crumbs.
4. Assemble the cake: spread half of the crumble on the bottom of the pan. Using a spoon or the bottom of a glass, press evenly the mixture. Them spread the filling on top of the crust. And sprinkle the remaining half of the crumble on top.
5. Bake for 30-35 minutes.
6. Release from the pan and serve with vanilla ice cream.

Hi lovelies, the weather here is still very warm, I could even dare to say hot, but the produce is already leaning towards autumn and I must say I am really excited. Also in our garden the produce is moving towards autumn and just about a week ago or so I was lucky enough to notice that our plum tree had some beautiful purple ripe plums on it and so I decided it is time to make my first plum pie cake of the season ???? This is not your traditional kind of plum cake or plum pie, but it is super easy and fast to make and it tastes delicious???????? Give it a go and you won´t regret it!????
