The Foodie Chef, Morgan Novy, is a personal chef in Houston, TX.
How it works:
In our first meeting we will discuss your dinnertime favorites, any possible allergies and dislikes, and then customize your meals. I will then shop for the freshest ingredients. After shopping, I will cook delicious meals in your home complete with serving directions.
A flat rate fee, in addition to grocery expenses, is charged for The Foodie Chef’s Service. Please email or call to inquire about the current seasonal menu and to set up an appointment.
The Mission:
I am here to transform your eating experience. I will provide you and your family with a personal chef service focused on presenting you with organic, well-balanced, healthy meals.
We only have this one body so we might as well take care of it. As a favorite culinary professor of mine once said “Either you pay now, or you pay later.” By choosing to eat thoughtfully now, there inevitably will be less need to rely on doctors and pills to remedy your health problems. The choice is yours.
My goal is to serve you with the best-tasting fresh and healthy foods. Eating naturally and organically epitomizes my approach to cooking. This means using lots of delicious and wholesome fruits, vegetables, grains, meat, and seafood.
Authentic Greek Fava
When I was younger, I never had a particular interest in Fava. I would see it on restaurant menus and I would always steer away from it, not really knowing what it was. Life has a funny way of making you re-evaluate your preferences though, and that's exactly what happened with me and Fava. I found myself in a picturesque Greek taverna in Ikaria, where I had the best Fava dish that I ever tried (and trust me, I've had quite a few since then). Authentic Greek Fava is definitely something you should try if you're ever in Greece - it's healthy, it's flavourful, and it's definitely a unique dish. Plus, it's often served as a dip, which makes it perfect for sharing with friends or family. So next time you're in a Greek restaurant, don't be afraid to try the Fava - you might just be pleasantly surprised.

The Fava - Fava Bean Purée Tea Sandwiches

Mashed Broad Beans Recipe - Traditional Turkish Recipes
Mashed Broad Beans
Serves 6-8 people
Cooking time: 45 minutes on medium heat.
Ingredients:
360g dried fava/broad beans,
1 medium onion,
1 small carrot,
1 tablespoon butter,
1920ml of water,
2 tablespoons lemon juice,
1 tablespoon sugar,
1 dessertspoon salt,
To grease the serving dish:
1 tablespoon of sunflower oil.
Tips for the perfect dish: For better results, make sure that the dried beans are not left for too long.
Cooking suggestions: If you enjoy aromatic flavours, add 1 tablespoon of fresh grated ginger to the bean mixture.
Preparation:
Chop one medium onion into chunks and roughly chop the carrots into chunks of about the same size.
Melt 1 tablespoon of butter in a large pan. Add the onions and sauté on medium heat for 2-3 minutes until they are slightly tender. When the onions are sautéed, add the carrots. Cook for 1-2 minutes more, then add the washed and drained dried beans.
Add the water to the pan. Then add the lemon juice, sugar and salt, and place the lid on the pan.
Cook the beans for about 35-40 minutes until the consistency is easy to blend. Then transfer all the ingredients to a blender and mix into a puree.
Grease a dish with sunflower oil and fill with the pureed bean mixture. Tidy up the surface of the mixture with a spatula, then leave to rest and cool in the refrigerator for at least 1 hour. Cut into segments and serve.
