How To make Pot Roast with Dill Pickles
3 lb Bottom or top round roast
2 tb Peanut oil
1 lg Yellow onion, peeled &
- chopped 4 Dried mushrooms (optional)
6 Peppercorns
1 Bay leaf
1/4 c Beef stock or bouillon
3 Dill pickles, chopped
1 c Sour cream
Brown the roast well in the oil (be sure that pan is hot before you put in the oil or the meat). lace the meat in a covered casserole, and add all the remaining ingredients except the sour cream. Simmer for about 2 hours, or until the meat is very tender. Add the sour cream, and simmer for 1/2 hour more. Slice and serve with the rich sauce on the top.

Slow Cooker Dill Pickle Pot Roast
Slow Cooker Dill Pickle Pot Roast is a different but delicious meal. Not real strong dill pickle flavor on the bun, but the next day I heated it in its juices , and served it over potatoes and the flavor was a little more intense dill pickle flavor. It was good either way .
Ingredients:
4 lbs beef chuck roast
.87 oz packet brown gravy mix
1 oz packet ranch dressing mix
24 oz jar baby dill pickles, discard all juice except 1/2 cup
1/2 cup pickle juice(see above)
6 whole garlic cloves (keep whole)
1/2 tsp dried dill (or 1 Tb fresh)

Recipe: This recipe is for 2 people! Double it if you like!
In a pot put:
2 & 3/4 cups chicken broth
1 cup diced carrots
1 lb. diced potatoes
1/4 cup unsalted butter
Bring to a boil ... about 5 minutes until taters are soft
add 1/2 cup chopped dill pickles, boil for 1 more minute.
In a medium boil whisk together 1/2 cup sour cream, 1/4 cup flour
and 1/8 cup water, add to the soup a little at a time.
On low heat ...
Stir until smooth then add a pinch of salt, 1 pinch of cayenne
pepper, and 1/2 tsp. of Old Bay seasoning. Then stir in 1 cup
of pickle juice.
Bring to a simmer then serve.
Garnish with fine chopped carrots, fresh dill and thin slices of
dill pickles on top! You can also add a bit of cheese on top!

Beef Chuck Roast Smoked with Dill Pickles
Dry Rub:
INGREDIENTS
1 teaspoon coarse Kosher salt
½ teaspoon fresh ground black pepper
½ teaspoon onion powder
½ teaspoon garlic powder
½ teaspoon dried parsley
¼ teaspoon dried dill
¼ teaspoon ground mustard
¼ teaspoon whole celery seeds
¼ teaspoon crushed red pepper flakes (optional)
Make the seasoning. Combine all ingredients in a mixing bowl. If you prefer a little heat, add in the crushed red pepper flakes.
