3 lb Bottom or top round roast 2 tb Peanut oil 1 lg Yellow onion, peeled & - chopped 4 Dried mushrooms (optional) 6 Peppercorns 1 Bay leaf 1/4 c Beef stock or bouillon 3 Dill pickles, chopped 1 c Sour cream Brown the roast well in the oil (be sure that pan is hot before you put in the oil or the meat). lace the meat in a covered casserole, and add all the remaining ingredients except the sour cream. Simmer for about 2 hours, or until the meat is very tender. Add the sour cream, and simmer for 1/2 hour more. Slice and serve with the rich sauce on the top.

INGREDIENTS: 4 lbs. beef chuck roast .87 oz. packet brown gravy mix 1 oz. packet ranch dressing mix 24 oz. jar baby dill pickles discard all the juices except a 1/2 cup 1/2 cup pickle juice (from above) 6 whole garlic cloves keep whole 1/2 tsp. dried dill (or one tablespoon fresh)
SLOW COOKER SIZE: 5-quart or larger
INSTRUCTIONS: Add the roast to the slow cooker. Sprinkle over the brown gravy mix and ranch dressing mix. Add the pickles, garlic cloves, dill and pickle juice. Place the lid on the slow cooker. Cook on LOW for 9-10 hours or HIGH for 5-6 hours Shred the meat with 2 forks and serve with your desired sides.

I love pot roast, it's an OG favorite of mine and it'll never get old. It's a perfect Sunday dinner, easy weeknight meal, and the ideal comfort food.
This version is a bit different than I'm used to, but it was delicious indeed! I love trying new ways of making the classics and this was a good one- try it!

Directions: Season your roast with salt and pepper Brown your roast well I browned mine for 4 minutes each side Place roast into crockpot 1.5Tbs worcestershire sauce 1 packet brown gravy mix 1.5 cups dill pickle juice 6+ pickles (1 per serving)
If you feel that your dill pickles do not have enough seasonings add dill and garlic
