How To make Pineapple Fritters with Sauce
Fritters: 1 egg
1 C. milk
3 Tbsp. sugar
2 1/2 Tsp. baking powder
1 C. crushed pineapple (drain and save)
2 Tbsp. butter -- melted
2 1/2 C. flour
Sauce: 1 C. brown sugar
2 Tbsp. flour
2 Tbsp. butter
1 C. water
1 C. pineapple juice
1/2 lemon juice
Fritters: Combine in order given: egg, milk, sugar, baking powder, pineapple, butter and flour. Add pineapple to batter last. Drop a tablespoon at a time into hot deep fat. Sauce: Combine and cook until clear. Pour over fritters.

These fritters are so delicious with that crunchy bite into a sweet pineapple and the drizzle with maple syrup is so easy for the perfect snack.
Ingredients
1 cup Flour, batter
6 slices of sweet pineapple, fresh or canned
½ cup of flour, dusting
1 ¼ cup cold water
2 tsp baking powder
Oil to deep fry
Maple syrup
Method
1. In a large bowl, sift together the 1 cup of flour and baking powder and whisk, then add in the cold water and whisk until a batter like consistency. Let it stand for 10 minutes.
2. Meanwhile, take the pineapple slices and dry them with kitchen paper and then dust the slices in the ½ cup flour and set aside.
3. In a pan with hot oil, take the pineapple slices dusted with flour and coat them with the batter and fry until golden brown.
4. Serve with maple syrup.

VEGGIE FRITTERS | GLUTEN FREE | WITH PINEAPPLE YOGURT SAUCE
Let's face it, during the holidays the last thing you want are veggies! But it's a new year, the holidays are over and it's time to welcome those vegetables back into our diets. Here's a great way to start doing that...VEGGIE FRITTERS! So yummy and crispy, packed with nutritious, healthful veggies. A nice side with dinner, or a light lunch. Recipe
Shopping List:
1 red pepper
1 package frozen sweet corn
1 bunch green onion
2 small or 1 medium zucchini
garlic cloves
oat flour (or make your own)
eggs
1-- 7 ounce container of plain greek 2% yogurt
crushed pineapple
honey
parsley
lemon or lemon juice
Beat 2 eggs, salt, pepper
Add 1/2 cup oat flour, 1/2 cup chopped red pepper, 1/2 chopped green onions, 1/2 cup shredded zucchini (make sure all water is removed) and 1/2 cup sweet corn (thawed frozen or fresh). 1 tsp fresh lemon juice. Add 1 minced garlic clove, salt and pepper to taste. Blend well.
Heat 2 Tbsp olive oil or coconut oil in a non-stick skillet (medium heat). Using a small ice cream scooper, spoon 3 inch diameter patties into skillet, leave room around patties. Cook 2-3 minutes or until golden brown, turn and repeat. Makes 8--3'' fritters
Pineapple Yogurt Sauce
In a blender mix 1 container of 2% greek plain yogurt, 2 Tbsp crushed pineapple with juice, 1 rounded tsp honey, a pinch of salt and 1 Tbsp of chopped parsley. Mix until well blended. Refrigerate until ready to use.
