PINEAPPLE FRIED RICE RECIPE:
2 cups fresh pineapples, cut into 1/2 inch chunks
1/2 a bell pepper, diced
1 stalk green onion
2 cloves garlic, minced
1 teaspoon red curry paste
1 cup protein of choice
3 cups day-old rice
1 tablespoon fish sauce
2 teaspoons soy sauce
1/4 cup roasted cashews
In a large wok, heat up with a drizzle of oil. Let it get hot and add in the curry paste. If cooking with chicken, add the chicken cut into small pieces, and stir fry for 4-5 minutes until cooked through. If using shrimp, cook for a minute until pink and remove / set aside. If cooking shrimp and chicken, then leave in and add the pineapples, bell pepper, garlic, and green onion.
Nestle the shrimp on top of the veggies to slow down the cooking process.
Once the pineapple starts to caramelize for (about 3 minutes), add the cold rice and break it up a bit. Add the fish sauce and soy sauce, the cashews, mix well and serve.

Ingredients
1 pineapple
1 cup pineapple chunks of meat
2½ cups Jasmine cooked rice
10-15 shrimps, peeled and deveined
2 eggs
1½ Tbsp vegetable oil
¼ cup, onion, diced
1 Tbsp garlic, roughly chopped
½ cup raw cashews, fry or toss
¼ cup diced carrot
¼ cup, chopped spring onion
1½ Tbsp Soy sauce
1 tsp salt
1 tsp sugar
¼ tsp white peppercorns
½ Tbsp curry powder
coriander leaves to garnish

Pineapple Fried Rice

Serves 2
- 3 egg yolks
- 1 tablespoon soy sauce
- 2 tablespoon butter
- 1 tablespoon minced garlic
- 2 cups cooked jasmine rice
- 1/2 cup spam
- 1/2 cup pineapple
- 1/2 cup sweet peas
- Salt to taste
- Black to taste
1. Combine egg yolk and soy sauce in a bow. Give it a whisk then set aside
2. Melt butter in a large non stick pan. Add the minced garlic and fry on medium to medium low until the garlic turns a light blonde color
3. Add the rice, be sure to break up all the big lumps
4. Next add the egg mix, then stir the until the rice has absorbed the egg mixture.
5. After that add the spam, pineapple, and sweet. Mix again until the spam is warmed through then finish with salt and black pepper to taste

Ingredients:
Cook rice:-

-Basmati rice - 1 cup
-Water for cooking
-Oil - 1tsp
-Salt - 1tsp
Roast Pineapple:-
-----------------------------
-Pineapple - 1+1/3 cup chopped
-Oil - 2tsp
-Pinch of salt
-Pinch of sugar
Preparations:-
----------------------------
-Oil - 2 tbsp
-Cashewnuts - 15
-Raisins /dry grapes - 2 tbsp
-Garlic - 5 large cloves
-Spicy Green chilli - 3
-Spring Onion - 1/2 cup chopped
-Frozen peas - 1/4 cup
-Carrot - 1/4 cup thin chopped
-Salt to taste
-Soy sauce - 2tbsp
-Pepper powder - 1/2 tsp
-Sugar - 1tsp
-1/2 Lemon
-Spring onion
1 to 2 teaspoons sriracha or chili garlic sauce (optional)
