How To make Pineapple Vegetarian Fried Rice
4 tb Vegetable oil
1 ea Yellow onion, finely chopped
3 ea Garlic cloves, chopped
1 c Carrots, chopped
1 c Green beansm chopped
1 c Pineapple chunks
3 c Rice, cooked
1 tb Tomato ketchup
1 ts Salt
1 ea Cucumber, thinly sliced
4 tb Green onion, chopped
4 tb Cilantro leaves, chopped
In a wok, heat the oil over medium heat & stir-fry the onion & garlic until golden brown. Add the carrots & green beans & stir-fry for 2 minutes longer Add the pineapple, rice, ketchup & salt. Mix well & stir-fry for another 3 minutes. Arrange the cucumber around the serving platter. Pour the rice into the centre. Garnish with green onion & fresh cilantro leaves.

There are various versions of Pineapple Fried Rice in many cuisines. Of course, I like the Thai version the best. The sweet, juicy pieces of pineapple go so well with jasmine rice. Crunchy cashews add texture and some raisins complete the balance of sweet and savory.
It can be a great main dish or side dish for a summer BBQ.
Ingredients:
2 cups – cooked rice (cook less water than normal, or overnight cooked)
1 cup – chunks fresh or canned pineapple
½ lb – peeled and deveined shrimps, can be substituted with any protean
½ cub – diced onion
½ cub – diced carrot or peas (fresh or frozen)
2 stalks – green onion
2 eggs
2-3 tbsp – cooking oil
1 tbsp – soy sauce
1 tbsp – fish sauce
1 tbsp – minced Garlic
1 tsp – sugar
1 tsp –curry powder
¼ tsp – white pepper
¼ cub – unsalted fried cashew nuts – optional
2 tbsp – raisins – optional
1-3 chili or jalapeno - optional
Cooking instruction:
STEP 1
To prepare the pineapple, using a sharp knife carefully cut the pineapple in half lengthways. Using the tip of a knife, cut around the edge of the pineapple being careful not to cut through the skin to form a bowl shape.
Then slice down and across. Use a spoon to scoop out the pineapple pieces. Discard the core and set it aside. We need only 1 cup for this recipe.
STEP 2
At medium heat, add vegetable oil, garlic, chili, and onion. Stir-fry for one minute until the onion is soft and fragrant. Add the prawns and carrot (if using raw carrot) stir-fry until almost cooked. Push ingredients to the sides of the wok and add the egg into the middle. Allow to set for a minute and then stir-fry to combine.
Add the rice, curry powder, soy sauce, fish sauce, sugar, and pepper. Stir-fry until well combined.
Add pineapple, cooked carrot, raisin, cashews, green onion, white pepper and toss to combine.
Serve in your pineapple bowl.

-Basmati rice - 1 cup
-Water for cooking
-Oil - 1tsp
-Salt - 1tsp
Roast Pineapple:-
-----------------------------
-Pineapple - 1+1/3 cup chopped
-Oil - 2tsp
-Pinch of salt
-Pinch of sugar
Preparations:-
----------------------------
-Oil - 2 tbsp
-Cashewnuts - 15
-Raisins /dry grapes - 2 tbsp
-Garlic - 5 large cloves
-Spicy Green chilli - 3
-Spring Onion - 1/2 cup chopped
-Frozen peas - 1/4 cup
-Carrot - 1/4 cup thin chopped
-Salt to taste
-Soy sauce - 2tbsp
-Pepper powder - 1/2 tsp
-Sugar - 1tsp
-1/2 Lemon
-Spring onion
1 to 2 teaspoons sriracha or chili garlic sauce (optional)

Garlic - 3 cloves
Shallots (sliced) - 15 nos
Egg - 3 nos
Red Chilli (chopped) - 2 nos
Carrot (finely chopped) - 1 no
Green Peas - ¼ cup
Soy Sauce - 1 tsp
Salt - ½ tsp
Black Pepper Powder - A pinch
Lemongrass (finely chopped) - 1 tbsp
Pineapple (diced) - ½ cup
Spring Onion (chopped) - For Garnish
Sesame Seeds (toasted)6For Garnish
Instructions:
1. Heat Oil in wok, add the beaten egg and scramble till it becomes fluffy.
2. Add garlic, lemongrass, shallots and red chillies. Saute them for a few seconds on a high flame.
3. Add the carrot, green peas and toss them for a few seconds on a high flame.
4. Add the cold rice, toss it till all the ingredients evenly combine.
5. Add soy sauce, salt, pepper and toss it till all the ingredients combine evenly.
6. Finally add the diced pineapple, toss it for a few seconds on a high flame.
7. Transfer it to a plate, garnish it with spring onion and toasted sesame seeds. Serve it hot.
