How To make Pineapple Vegetarian Fried Rice
4 tb Vegetable oil
1 ea Yellow onion, finely chopped
3 ea Garlic cloves, chopped
1 c Carrots, chopped
1 c Green beansm chopped
1 c Pineapple chunks
3 c Rice, cooked
1 tb Tomato ketchup
1 ts Salt
1 ea Cucumber, thinly sliced
4 tb Green onion, chopped
4 tb Cilantro leaves, chopped
In a wok, heat the oil over medium heat & stir-fry the onion & garlic until golden brown. Add the carrots & green beans & stir-fry for 2 minutes longer Add the pineapple, rice, ketchup & salt. Mix well & stir-fry for another 3 minutes. Arrange the cucumber around the serving platter. Pour the rice into the centre. Garnish with green onion & fresh cilantro leaves.

PINEAPPLE FRIED RICE RECIPE:
2 cups fresh pineapples, cut into 1/2 inch chunks
1/2 a bell pepper, diced
1 stalk green onion
2 cloves garlic, minced
1 teaspoon red curry paste
1 cup protein of choice
3 cups day-old rice
1 tablespoon fish sauce
2 teaspoons soy sauce
1/4 cup roasted cashews
In a large wok, heat up with a drizzle of oil. Let it get hot and add in the curry paste. If cooking with chicken, add the chicken cut into small pieces, and stir fry for 4-5 minutes until cooked through. If using shrimp, cook for a minute until pink and remove / set aside. If cooking shrimp and chicken, then leave in and add the pineapples, bell pepper, garlic, and green onion.
Nestle the shrimp on top of the veggies to slow down the cooking process.
Once the pineapple starts to caramelize for (about 3 minutes), add the cold rice and break it up a bit. Add the fish sauce and soy sauce, the cashews, mix well and serve.

This pineapple fried rice with the authentic taste of Thai has a perfect balance of sweet and savoury flavours. It is mildly spiced, tasty and healthy with chunks of juicy pineapples.
Pineapple fried rice must have some thick pieces of pineapples and that bolt of Thai flavour. Therefore, fish sauce, turmeric powder and curry powder are tossed with rice over high heat to coat each grain with the seasoning. This is the secret to a mouth-watering plate of fried rice which is so popular in Thailand and even Malaysia. It's a favourite among kids and adults alike. So, it is not a surprise to find pineapple fried rice sold at a street food stall as well as being offered in the menu of a five-star hotel.
The cooking technique for pineapple fried rice does not differ much when compared to preparing other types of fried rice. It's all about the right portion of ingredients, heat and a few basic rules. Of course, it can be prepared easily on a weekday even without using overnight rice. If you are using the whole pineapple, don't throw away the skin but instead turn it into a pineapple bowl.

Vegan Pineapple Fried Rice | Asian Plant based Recipe
Vegan Pineapple Fried Rice
2 cups a day old rice, cooked and cooled
1 cup pineapple
1 tbsp. soy sauce
1 tbsp vegan fish sauce
1 tbsp vegetarian oyster sauce
1 tbsp palm sugar
1/4 tsp white pepper
1 tbsp curry powder
50g green peas
50g frozen corn
50g frozen cornstarch
1 onion, chopped
3 cloves garlic, minced
1 fresh chilli, sliced
Chopped scallions for garnish
Method:
1.) Heat oil, sauté garlic till fragrant. Add in onion and fresh chilli, sauté for 1 minute.
2.) Add in frozen corn, peas and fried tofu. Stir for 30 seconds.
3.) Add rice and the sauce mixture, toss until everything well combine.
4) Add in pineapple, stir fry fir another 1 minute. Let the rice toast to develop some charring.
5.) Serve on a pineapple bowl and enjoy.
