Maizena/ Corn flour - 4 cucharadas/ 4 tbsp
Salsa de soja/ Soy sauce - 2 cucharadas/ 2 tbsp
Ajo/Garlic - 2 dientes/2 cloves
Gengibre en polvo/ Ginger powder - mitad de una cucharadita 1/2 tsp
Salsa/ Sauce
Tomate frito/ Tomato sauce - 4 cucharadas/ 4 tbsp
Chilli en polvo/ Kashmiri chilli powder -1 cucharadita/ 1 tsp
Vinagre blanco/ Distilled vinegar - 1 tbsp
Azucar/ Sugar - 1cucharada/ 1 tbsp
Pimienta negra/ Black pepper powder - 1 cucharadita/ 1 tsp
Agua/ Water - 1/4 cup/vaso
Verduras para acompanar el plato/ Vegetables
Gengibre/ Ginger
Ajo/Garlic
Cebolleta/Spring onion
Pimientos/ Sweet Peppers
Sal/ Salt
Salsa de soja/ Soy sauce - 3cucharadas/ 3 tbsp
Chilli rojo/ Red chillies - al gusto
Cebolla/Onion - 2
Para espesar la salsa/ To make the sauce thicker (optional)
Agua/Water - 1 cup
Maizena/Corn flour -1 cucharadita 1 tsp

Chicken vindaloo is one of the most iconic Indian foods, known for its spicy and tangy flavor combination. A quick and easy kitchen staple, my version is wonderfully fiery with Indian heat, though you can easily adjust the spice to your preference.

THINGS YOU’LL NEED:
2 pounds chicken thighs chopped
2 tablespoons olive oil
1 yellow onion chopped
2 serrano peppers chopped (or use Indian peppers if you can obtain them)
1 tablespoon tomato paste
Salt and pepper to taste
FOR THE MARINADE
½ cup white vinegar
6 cloves garlic minced
2 tablespoon spicy red chili flakes I used ghost pepper flakes for an EXTRA kick
1 teaspoon paprika
1 teaspoon ginger
1 teaspoon coriander
1 teaspoon turmeric
1 teaspoon mustard powder
½ teaspoon cumin
½ teaspoon cinnamon

Super Spicy Szechuan Chicken
Marinade Ingredients:
3 tsp of corn starch
1 tsp of salt
1 Tbsp. of rice wine
1/2 tsp of white pepper
1 Tbsp. of soy sauce
1 shredded scallion
2 slices of ginger
4 chicken thighs, chopped into bite-sized pieces
Other Ingredients:
vegetable oil for frying
2 Tbsp. of Szechuan peppercorn
5 dried red chilies, chopped
50 whole dried red chilies
4 slices of ginger
1 scallion, chopped
1/3 cup of peanuts
1/2 tsp of sugar
1/2 Tbsp. of rice wine
1 Tbsp of sesame oil
chopped scallions as garnish
Directions:
Combine marinade ingredients in a bowl, add the chopped chicken. Marinate for 10 minutes.
In about 1 1/2” of oil, fry the chicken until browned and crispy. Remove and set aside.
Heat oil in a wok or a large pan. Add the Szechuan peppercorn and dried red chilies. Fry until fragrant. Add the rest of the dried red chilies, ginger, scallion and peanuts. Fry for a minute. Add the fried chicken pieces, sugar, rice wine and sesame oil. Toss to coat.

Spicy Chicken Chili
This Spicy Chicken Chilli was one of my favourite dishes growing up. I put my own spin on this tex mex classic by swapping in chicken for beef, loading it up with veggies, and adding a special blend of spices.
Perfect served piping hot in a bowl with some shredded cheddar and a squeeze of lime to garnish. This dish is also amazing transformed into nachos, burritos, or even an awesome grilled cheese :D

INGREDIENTS
1 tbsp, olive oil
1 medium onion, finely chopped
1 stalk of celery, finely chopped
1 medium carrot, finely chopped
1 red bell pepper, finely chopped
2 cloves garlic, minced
1 lb, ground chicken (or beef, vegetarian meat alternative, mushrooms)
2.5 cups, strained tomato sauce (passata)
2 cups, water
1 can, red kidney beans (drained and rinsed)
1 tbsp, ground cumin
2 tsp, ground coriander
2 tsp, smoked paprika
2 tsp, dried oregano
1 tsp, garlic powder
1 tsp, cayenne chilli
Salt and pepper to taste
1/3 cup, fresh chopped coriander
Shredded cheddar cheese
Wedges of lime
METHOD
Heat a deep pot on medium heat and pour in olive oil. Add onions, celery, carrots and peppers, and cook until tender and translucent. Then add in garlic and cook for 10-15 seconds until aromatic.
Add ground chicken, and increase heat to high. Using a spoon/spatula, break up the meat and cook until the meat has slightly browned and no excess moisture is left in the pan.
Pour in tomato sauce, water, and beans. Season with spices, and salt and pepper to taste. Cook chilli on medium heat for 30 minutes, stirring once in a while until slightly thickened.
Off the heat stir in fresh coriander. Serve in bowls topped with shredded cheddar and a squeeze of lime. Enjoy! :)
