3 Ingredient Peanut Butter Cookies | Easy Cookie Recipe
These 3 ingredient peanut butter cookies are very easy to make since you probably already have these ingredients to make these cookies! 3 ingredient peanut butter cookies are flourless & gluten-free, so if you are gluten intolerant, these peanut butter cookies are a perfect tasty treat. Feel free to substitute creamy peanut butter for another type of peanut butter that you prefer, but it may change the consistency of the peanut butter cookie.
Ingredients
1 cup creamy peanut butter
1 cup granulated sugar
1 egg (room temperature)
Directions
1. In a large mixing bowl, add one cup of creamy peanut butter. Feel free to substitute creamy peanut butter with another type of peanut butter or nut butter. I find it helpful to spray the measuring cup with some non-stick cooking spray to get all the peanut butter out easily.
2. Add one cup of granulated sugar and add one room temperature egg. Use a hand or stand mixer and mix the ingredients together until combined. The mixture should be combined within one minute.
3. Line a baking tray with parchment paper and roll the dough into one inch balls with your hands or using a cookie scoop.
4. Place each ball on the baking sheet, leaving enough room in between them since they will spread out. Use a fork and create a crisscross shape on the top and gently press the cookie down. Bake these cookies in a 350 °F preheated oven for 10 minutes or until the tops of the cookie are light golden brown.

Ingredients:
Makes 25 cookies
3/4 cup (185g) peanut butter (creamy)
1/2 cup (110g) unsalted butter, soft
1/2 cup (100g) white sugar
1/2 cup (100g) brown sugar
1 egg
2 cups (250g) flour
1/2 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
1 tsp vanilla extract
Method:
1. Preheat oven to 180C/360F. Line baking sheet with parchment paper.
2. In a large mixing bowl cream together white sugar, brown sugar and butter until fluffy, about 3 minutes. Beat in the egg and vanilla extract, until combined. Mix in the peanut butter until smooth and creamy.
3. In a medium bowl stir flour, baking powder, baking soda and salt.
4. Add the flour mixture to the peanut butter mixture and beat until well combined. Place the batter in the refrigerator for 30 minutes.
5. Roll the batter into 1-inch (2.5 cm) balls. place the cookies on the baking sheet, leave about 2 inches (5 cm) apart. Flatten cookies, using a fork, in a crisscross pattern.
6. Bake the cookies for 10-12 minutes, or until lightly browned around the edges. Let cool 15-20 minutes.
