How To make Pasta Salad with Chicken and Artichokes
1 lb Pasta shells
2 T Oil
1 1/2 c Mayonnaise
3 T Lemon juice
3 T Chopped parsley
1 t Dried parsley
3 c Diced cooked chicken
6 oz Jar artichokes chopped and
1 ea Dash of tabasco
1 ea Toasted almonds
Cook pasta in large pot of boiling, salted water until tender, but firm, 8 to 12 minutes, stirring often. Drain well and rinse with cold water. Shake out excess water and toss pasta with oil. Combine mayonnaise, lemon juice, parsley and basil. Place pasta in large bowl. Add mayonnaise mixture, chicken, artichokes and tabasco. Toss well. Garnish with almonds. For a decorative presentation, serve in avacado halves, in tomato cups or on lettuce leaves. Yields 6-8 servings.

Easy Pasta Salad Recipe with Artichoke Hearts + How to Cook Artichoke (vegan/vegetarian recipe)
A quick and easy pasta salad recipe with grape/cherry tomatoes, romaine lettuce, green and Kalamata olives and artichoke hearts. Fresh steamed artichoke hearts are really delicious but but you can also use canned or preserved artichokes in jars to make it easier and will be equally tasty.
Ingredients (3-4 servings, as a main dish)
250 g [8.8 oz] pasta
1 - 2 fresh artichokes
10 - 12 grape/cherry tomatoes
8 - 10 romaine lettuce leaves
15 - 20 mixed green and kalamata olives
1 tablespoon olive oil
1 tablespoon red wine vinegar (or any other vinegar of choice)
Salt and pepper to taste

Here's a tasty use for canned artichoke hearts. I usually use artichoke heart as part of a salad, but paired with capers, it makes a great pasta dish--and using quick-cook Chinese flat noodles, this dish can be ready in about 10 minutes, including prep time. Print the complete recipe at this link:

Artichoke-Caper Pasta Recipe
ingredients:
14 oz can quartered ARTICHOKE HEARTS
¼ cup BUTTER
¼ cup OLIVE OIL
1 lg ONION (chopped)
5 cloves GARLIC (finely chopped)
2-3 Tbsp CAPERS
8 oz PASTA
2-3 Tbsp LEMON JUICE (optional)
SALT and PEPPER to taste
In a large skillet on medium-high heat, add olive oil and most of the butter. When oil is hot, add onion and garlic and saute until onions begin to soften. Add artichoke hearts, capers and salt to taste and continue sauteing for 2-3 minutes. Occasionally I'll add the juice and zest of ½ a lemon, which is a pretty tasty option, so definitely give it a try sometime. Add any remaining butter to the skillet. Add cooked pasta to the skillet. I like to use quick-cook Chinese flat noodles since it's easy to time with the cooking of the sauce, but use any kind of pasta you like, just allow enough time for cooking. And for a wetter sauce, add a little bit of the pasta water to the skillet. Mix pasta and sauce in skillet and then serve immediately. Garnish with fresh chopped parsley or thyme--or just add a few more capers. Serve with Parmesan cheese if desired. It's a quick, easy recipe and a great use of canned artichoke hearts. Enjoy!
Cook Like a Pro Lemon Zest and Artichoke Pasta Recipe for a Flavorful Dinner
776 Deluxe Papardeles Egg Pasta -
Lemon zest and Artichoke Pasta
This is a wonderful weeknight meal that my family loves. It also makes a great side dish! I use my favorite 776 pasta with this dish whenever possible. It is the best because it holds the flavors and pairs so well with the artichokes.
Serves 4 to 6
1 pound pasta
2 tbsp olive oil
2 tbsp butter
3 cloves whole Garlic, finely chopped
10 artichoke hearts, quartered
Zest of 2 lemons
½ tsp salt
pinch of pepper
Feta for garnish
Prepare the pasta according to the package directions.
While the pasta is cooking, add the butter, olive oil and garlic to a large saute pan. Cook for about 3 minutes, or until the garlic is tender.
Then, add the artichoke heart quarters and saute well until heated through.
Stir in the lemon zest, salt, and pepper.
Add the cooked pasta to the pan and toss the ingredients really well. Garnish with feta and serve hot!
