1 lb Parsnips 2 tb Flour 1 pn Mace 2 tb Melted butter 1 x Salt and pepper 1 x Large egg 8 tb Breadcrumbs (heaping) 1 x Oil for frying Peel and slice the parsnips, then boil in salted water until tender. Drain and mash them well. Add flour, mace, melted butter, salt and pepper, then form into small flat, round cakes. Dip into the beaten egg, then into the breadcrumbs, and fry in hot oil until brown on both sides.

If you fancy crisps, but feel guilty about it... why not try making some parsnip crisps.... They're super quick and easy and scratch the itch if you're craving something crispy and comforting.
Ingredients 2 large parsnips 1 tsp oil Salt Pepper
Preheat oven to 160oC (140oC fan) Peel parsnips Slice very thin, either using a vegetable peeler, or mandolin Toss in oil and season with salt and pepper Lay out slices in one layer on a baking tray Bake for about 7 minutes, turn and then return to oven for another 7 minutes. Eat and enjoy
