This French toast breakfast casserole is so flavorful and a family favorite. Whenever it’s baking in the oven, the warming notes from the cinnamon lures the entire family into the kitchen. It’s the ideal way to use up leftover stale bread that you may have lying around the kitchen. Plus, it’s hands-off as you don’t have to flip the bread in the pan, making it a lot easier to feed a crowd.

Crunchy French Toast Recipe With Cornflakes | Magnolia Crunchy French Toast | Cooking Up Love
Our Crunchy French Toast is inspired by the Polar Bear at one of our favorite brunch spots, 26 Beach. We use a rich, buttery brioche bread, coated with frosted flakes, that's toasted and served with ice cream, fruit and golden syrup. Crunchy french toast is a decadent breakfast treat that's easy to make and perfect for birthdays, holidays and brunch, like Mother's Day or Father's Day.
Our crunchy french toast is almost like the new recipe for Magnolia french toast crunch shared by Joanna Gaines. Her recipe uses a homemade caramel crunch flavored corn flake topping, and we're excited to try the Magnolia recipe when we have a little more time to make her crunch topping recipe! In the meantime, we always have Frosted Flakes on hand, and this french toast recipe comes together in minutes, you'll be surprised at how quick and easy it is to make this special breakfast and it's one fo our favorite easy brunch recipes!
Crunchy French Toast Ingredients
8 slices brioche or challah bread
3 eggs
1/4 tsp salt
1/2 tsp cinnamon
2 tsp vanilla extract
1 cup heavy cream
2 - 4 cups frosted flakes, corn flakes or rice crispies
1 - 2 tablespoons butter
your favorite toppings - ice cream, whipped cream, syrup, fruit
How To Make Crunchy French Toast
For the custard, whisk 3 eggs. Add 1/4 tsp salt, 1/2 tsp cinnamon, 2 tsp vanilla extract and 1 cup of heavy cream. Whisk the mixture together until it's well blended.
Measure out 2 cups of frosted flakes or corn flakes to start, and crush it slightly.
Dip a slice of bread into the custard, coating both sides… then gently press the bread into the crushed cornflakes. Continue coating the bread slices, and add more frosted flakes as you need them.
Heat a griddle or skillet over medium heat and melt about a tablespoon of butter. Cook the slices for a few minutes, about 2 - 3 minutes on each side, until the bread is golden on the bottom.
Serve immediately, or place them on a sheet pan with a wire rack in an oven heated to 250 degrees.
Today I’m serving them up like they do at 26 Beach Cafe, topped with ice cream, fruit, powdered sugar, all of your favorite toppings.

BETH'S CRUNCHY BRIOCHE FRENCH TOAST
Serves 4-5
INGREDIENTS:
5 slices of thick egg bread, Brioche or Challah
4 eggs
3 tbsp (45 ml) heavy cream
2 tsp (10 ml) vanilla
Pinch of salt
1 tsp (5 ml) cinnamon
1 tsp (5 ml) sugar
2 cups (300 g) of cornflakes, crushed into a coarse meal
3 tbsp (30 g) butter
Garnish:
Powdered sugar
1 cup (150 g) mixed berries (blueberries, raspberries, blackberries)
METHOD:
In a shallow bowl or pie plate, mix together the eggs, cream, vanilla, and cinnamon.
Place cornflakes in a resealable plastic bag and crush with a rolling pin until a coarse meal forms, transfer to a shallow bowl or pie plate. Toss in sugar and cinnamon.
Cut bread into thick 1 ½ inch slices and place in egg mixture to soak well on both sides, allowing egg mixture to absorb into bread. Then transfer to the corn flake mixture and coat well on both sides.
Place a pat of butter in a skillet, once sizzling add bread and allow to cook for a few minutes on each side until golden brown. Transfer to a cookie sheet and once all slices have been browned in skillet transfer to a 300F (150F) oven for 5-7 minutes to cook any egg that didn't brown on sides and to crisp up the topping.
Remove slices from cookie sheet, dust with powdered sugar. Cut on the diagonal, arranged on plate and top with fresh berries!
