Learn the basics of preparing brisket in the oven for a tender, juicy main dish.
Step 1: Preheat the oven Preheat the oven to 350 degrees Fahrenheit. Put the brisket in the roasting pan.
Step 2: Mix ingredients In a small bowl, combine the salt, pepper, garlic, and oregano. Rub the mixture onto the brisket. Cover the brisket with the carrots, celery, onion, and bay leaves.
Step 3: Pour tomato juice Pour the tomato juice on the brisket so that covers about three-quarters of the meat. Cover the pan with parchment paper; then with aluminum foil.
Tip Don't let the foil touch the meat, since it will react with the tomato juice and affect the flavor.
Step 4: Bake Bake for three to three and a half hours, until the meat is tender.
Tip Test the meat by piercing the center of the brisket with a fork. If it goes in the meat easily, it's done.
Step 5: Remove brisket from pan Remove the brisket from the pan and onto a plate. Allow it to rest. In the meantime, place the pan with the juice across two stovetop burners, and boil the mixture over medium heat for 30 minutes, until the sauce is thickened.
Step 6: Slice and serve Slice it thinly across the grain and serve with the sauce.

You haven't had real brisket until you've had Texas Smoked brisket.. and you haven't truly lived until you've made a homemade smoked brisket. This isn't just a recipe for brisket, it's a recipe for success. Nothing but a beautiful smoke ring, and melt in your mouth tender brisket.
This Faux-B-Q Brisket Oven Barbecue Brisket recipe, gives you the feeling of a slow smoked BBQ Beef Brisket. But you cook it in your oven. This could also be a slow cooker BBQ Beef Brisket recipe - just follow up to the point we put it in the oven, but instead put it in a slow cooker on low for 8-10 hours.
Ingredients: ¼ cup brown sugar 5 mL (1tsp) paprika 10 mL (2 tsp) ground black pepper 15 mL (1 Tbsp) dry yellow mustard 10 mL (2 tsp) chipotle chili powder 7 mL (1 1/2 tsp) coarse salt 5 mL (1tsp) cumin 15 mL (1 Tbsp) Worcestershire sauce 30 mL (2 Tbsp) Vinegar 2 Kg (4 to 5 pounds) beef brisket
Method: Preheat the oven to 150ºC (300ºF). Mix everything but the brisket in a bowl to make a loose paste. Rub the mix all over the brisket, and place in a braiser with a heavy lid. If your pan doesn't have a tight fitting lid / or is much larger than the brisket - wrap it in foil, to keep it juicy! Cook the brisket for 4 1/2 to 5 hours. It is done when the internal temperature reaches 85ºC (185ºF). When it's done, you can slather some of your fave BBQ sauce on top and place under the broiler to char.
