How To make Okra with Tomatoes and Onions
2 lb Fresh young okra
3/4 lb Onion; sliced thickly
6 tb Olive oil
3 Garlic cloves; halved
1 lb Tomatoes; skinned & sliced
Salt and black pepper 1 Lemon (juice only)
Wash okra. Cut off any hard stems and dry okra thoroughly. Heat oil in large saucepan and fry onions with the halved garlic cloves until slightly soft, transparent, and golden. Add okra and continue to fry until slightly softened. Add the sliced tomatoes and saute for a few min. longer. Season to taste with salt and pepper. Cover with water, bring to a boil and simmer until the okra is very tender, usually about 1 hour. Squeeze in the lemon juice and cook for a further 15 min. (If using canned okra, cooking time will be much shorter. Serve hot or cold. If to be served cold, allow to cool in the saucepan before turning out into a serving dish. Ingredients
1 lb Whole Okra
2 Tomatoes
2 Onions
2-3 Green chillies
1/2 tsp of salt, red chilli powder, turmeric, and coriander powder
1 tsp Cumin seeds
Recipe
1. Add oil to pan over high heat
2. Add sliced okra
3. Fry for 4-5 min, util slightly browned
4. Remove from heat
5. Add sliced vegetables to same pan (onions, tomatoes, green chillies)
6. Add spices (coriander powder, cumin seeds, turmeric, red chilli powder)
7. Add salt to taste
8. Fry for 1-2 minutes
9. Add cooked okra to the pan
10. Mix well and fry for 1 min
11. Reduce to low heat and simmer for 2-3 minutes

If you do not like okra because of the slime then this recipe will change your mind. If you follow all the tips and tricks I mentioned you will start loving okra. This combination of bhindi with potatoes is really great and the addition of spices makes it super yummy.
Ingredients required for making bhindi aloo fry - Serves 4 to 5
Always use a wide frying pan to make this recipe .
* 420 gm/ 1 lb okra(bhindi). Please wash the okras very well before chopping them.
* 300 gm / 11 oz/ 2 medium to large potatoes
* 1/2 of a medium onion cut into rough slices
* 1/2 teaspoon black mustard seeds(rai)
* 1/2 teaspoon cumin seeds(jeera)
* 1/2 teaspoon turmeric powder (haldi)
* 1 teaspoon kashmiri red chilli powder. Please adjust proportion according to your preference. You can even use paprika or 1/2 teaspoon cayenne pepper or any red chilli powder.
* 1 teaspoon ground cumin (jeera powder)
* 1 teaspoon ground coriander (dhania powder)
* 1/4 th freshly crushed black pepper
* 1 teaspoon heat salt or to taste
* 3 to 4 tablespoons oil
* 1 teaspoon fresh lime/lemon juice
Serve this with hot steamed rice or roti with any dal (check my channel page playlist for dal recipes given below).
