Ingredients:
2 onions, 3 green chilies, 10-12 garlic cloves, 1/2 kg bhindi (okra), 2 tomatoes, 2 tbsp wood pressed ground nut oil, 1 tsp jeera (cumin seeds), 1/2 tsp turmeric powder, 1/2 tsp black pepper, 1 tsp coriander powder, 3/4 tsp kashmiri chilli powder, pink himalayan salt as needed, coriander leaves.

Masala Bhindi
Recipe in English:
Ingredients:
-Oil 1 tbs
-Bhindi (Okra) ½ kg
-Oil 2-3 tbs
-Pyaz (Onion) Sliced 2
-Lehsan (Garlic) Chopped 1 tbs
-Hari mirch paste (Green chilies paste) 2 tbs
-Tamatar (Tomatoes) Chopped 2-3
-Namak (Salt) 1 tsp or to taste
-Haldee powder (Turmeric powder) ½ tsp
-Dhania powder (Coriander powder) ½ tsp
-Zeera powder (Cumin powder) ½ tsp
-Lal mirch powder (Red chilli powder) 1 tsp or to taste
-Sabut lal mirch (Button red chilies) Crushed 3-4
-Lemon juice 1-2 tbs
-Qasuri methi (Dried fenugreek leaves) ¼ tsp (optional)
-Hari mirch (Green chilies) 2-3
-Podina (Mint leaves)
-Hara dhania (Green coriander)
Directions:
-In pot,add oil,okra and fry for 4-5 minutes and set aside.
-In pot,add oil and onion,fry until translucent.
-Add garlic and green chili paste,mix well.
-Add tomatoes,salt,turmeric powder,coriander powder,cumin powder,red chili powder,button red chilies and mix well until tomatoes are soft.
-Add stir fried okra and mix well.
-Add lemon juice,dried fenugreek leaves,green chilies,mint leaves,green coriander and serve.

-Pot mein oil aur bhindi dal ker 4-5 minute kliya fry ker lein aur side per rakh dein.
-Pot mein oil aur pyaz dal ker translucent hunat tak fry ker lein.
-Lehsan aur hari mirch paste dal ker ache tarhan mix ker lein.
-Tamatar,namak,haldee powder,dhania powder,zeera powder,lal mirch powder aur sabut gol mirch dal ker tamatar naram hunay tak mix ker lein.
-Stir fried bhindi dal ache tarhan mix ker lein.
-Lemon juice,qasuri methi,hari mirch,podina aur hara dhania dal ker serve karein.
No Onion No Garlic Bhindi Masala Recipe | Chef Sanjyot Keer
Full recipe for No Onion No Garlic bhindi masala

For half cooked lady finger
Ingredients:
• Bhindi (Lady finger) 250 gm
• Oil 2 tbsp
Method:
• Wash the lady finger well and wipe it with a dry cloth.
Note: prefer small size lady finger, if the lady finger is big in size cut in 2 halves.
• Cut the head and put an incision in between.
• Set a pan on medium high heat and heat the oil. Shallow fry the lady finger until half cooked. Remove and keep aside.
For masala or gravy
Ingredients:
• Oil 1 tbsp
• Jeer 1 tsp
• Hing (asafoetida) ½ tsp
• Tomatoes 3-4 medium size (finely chopped)
• Salt to taste
• Red chilli 1 tbsp
• Coriander 1tbsp
• Turmeric powder 1/2 tsp
• Amchur 1tsp
• Dahi (curd) 2 tbsp
• Water 150 ml
• Half cooked lady fingers
• Kasuri methi 1 tsp
• Garam masala 1 tsp
• Fresh coriander 1 tbsp (chopped)
Method:
• Set a pan on medium heat & heat 1 tbsp oil in the pan, add jeera and hing, sauté for 30 seconds.
• Add the tomatoes and salt to taste, cook until the tomatoes are mushy.
• Add red chilli powder, coriander powder, turmeric powder and amchur powder, cook the masala for 2-3 minutes.
• Slow down the heat, add dahi & stir continuously for 1-2 minutes.
• Add water and cook well until oil is released.
• Add the half-cooked lady finger, kasuri methi and garam masala, mix well, cover & continue to cover & cook on low flame for 2-3 minutes.
• Garnish with freshly chopped coriander leaves and serve hot with roti or paratha of your preference.
