Half-Baked White Chocolate and Macadamia Nut Cookie Recipe | Cupcake Jemma
If, like me, you love to devour a hunk of cookie dough before you get your bake on then these cookies are for you. They have the benefit of being slightly undercooked in the middle so you can get you fix all the way through the life of your cookie!
225g unsalted butter, soft
100g caster sugar
170g light soft brown sugar
1 large free-range egg
1 tsp vanilla extract
235g plain flour, sifted
1/2 tsp baking powder
1/4 tsp bicarbonate of soda
1/2 tsp salt
100g white chocolate chips
50g macadamia nuts

Recipe:
3 cups mini marshmallows
2 cups raw, unsalted almonds
⅓ cup flavorless oil
3 cups chocolate chips
Directions and timestamps:
(0:18) In a double boiler, melt chocolate chips with oil until creamy and smooth, set aside
(0:27) In a 9x9 baking dish, greased and lined with parchment, pour half of the marshmallows, almonds and chocolate mixture
(0:40) With a spatula, smooth the chocolate mixture to the edges
(0:43) Repeat the layers with the second half of the marshmallows, almonds and chocolate mixture, smooth to the edges
(0:58) Top with mini marshmallows and place in the refrigerator for one hour to set
(1:03) Remove from pan and remove the parchment paper
(1:07) On a cutting board, using a sharp knife, cut into squares, cleaning knife in between

UPDATE link to Ebook! *** Cheap, easy, fast. Why the hell not? Bake bananas stuffed with anything and everything. Chocolate chips, salted caramel, almond butter, marshmallows.... grilled pineapple, mango or peaches would be good! Toasted almonds or walnuts. Whipped cream. All great options.
