2 tb Cooking chocolate melted 1/2 c Melted marg or butter 1 c Sour cream or yoghurt 1/2 c Brown sugar 1 Egg 1 t Vanilla 1 1/2 c Flour 1 t Baking powder 1/2 c Walnuts 3/4 c Chopped marshmallows Preheat oven to 400f Prepare muffin pans Put first 6 ingrediants in a bowl and mix well. Add the remaining ingrediants except the marshmallows, blend until just mixed, add marshmallows. Bake for 15-20 min.

A very warm welcome back to What’s For Tea :) Today I whipped up a lovely batch of muffins. I made some Lemon, Blueberry and also white chocolate and raspberry. These are so easy to make, and even easier if you’re only making one flavour!
Everything I used will be listed below,

Basic muffin mix -
300g (2 & 1/2 cups) Plain, or all purpose flour 200g (1 cup) White sugar 240ml (1 cup) Whole milk 1 Tablespoon fresh lemon juice (mix with the milk 10 minutes before using) 150ml (0.6 cup) Vegetable, sunflower or olive oil 2 Large eggs or 3 medium eggs 3 Teaspoons baking powder 1/2 Teaspoon of salt 1 Teaspoon vanilla extract 1/4 cup Brown sugar for the tops
Additions - (multiply the ingredients below by 3 if you’re just making one flavour instead of three like I did)
Blueberry Muffins : 100g (1/2 cup) Fresh blueberries, frozen are ok too.
