How To make New Orleans Crab Canape
2 tb Butter
1 White onion, small, or
-shallot 1 tb Flour
1/2 c Broth, water, or white wine
3/4 c Cooked (or 6-1/2 oz can)
-crabmeat, drained And flaked CHEESE TOPPING: 2 tb Butter
2 tb Flour
4 oz Parmesan cheese (1 cup),
-grated 4 oz Swiss or Gruyere cheese,
-grated 1 Loaf white bread
Butter for sauteing FORCEMEAT: Melt butter, add onion, and cook over moderate heat until onion is soft. Add flour, stir to blend, cook 1 minute; stir in broth, cooking until smooth. Add crabmeat, simmer 8 to 10 minutes. Remove from fire; cool. Cheese Topping: Melt butter, add flour to make a roux, and cook two or three minutes. Add cheses, blend well. Remove from fire, cool, then form into small firm, round balls. Cut bread into canape-sized pieces; saute in butter. Spread each with the crab mixture; then place a cheese ball over the crab. Just before serving, place in hot oven for 5 minutes until cheese is melted and bubbly. Makes about 50. From: A Salute to Cheese, by Betty Wason, Hawthorn Books, Inc., 1966. ✅Ingredients
• 12 ounces lump crab meat
• 2 ribs celery diced
• 1/4 cup red onion minced
• 1/3-1/2 cup mayonnaise based on your preference
• ¼ cup minced fresh dill
• 1 tablespoon lemon juice
• 1 tablespoon capers
• 1 tablespoon dijon mustard
• 1/2 teaspoon salt
• 1/2 teaspoon pepper
• 1/2 teaspoon paprika
✅Instructions
1️⃣ In a large mixing bowl whisk together mayonnaise, dill, lemon juice, dijon mustard, salt, pepper, and paprika.
2️⃣ Add chopped celery, onion, and capers. Mix together. Then add in crab meat and gently stir until all is coated.
3️⃣ Cover bowl with plastic wrap and chill at least 1 hour before serving.
Notes:
Can use imitation crab (Krab) in place of lump crab meat.

Cucumber & Cheese Rolls
Ingredients:
1 cucumber
100 grams vegan white cheese
finely chopped red bell pepper
fresh dill
Preparation
In a medium bowl, add in cheese & mash
Add in finely chopped bell pepper & dill
Stir all ingredients to combine.
Using a vegetable peeler or mandoline, peel the cucumbers lengthwise into thin slices.
Spread a small spoonful of filling over a cucumber slice.
Starting from one end, roll the cucumber into a spiral. Repeat with remaining cucumber slices and filling.
Cucumber Avocado Rolls
Ingredients
1 Avocado
½ of a lime
salt
black pepper
1 cucumber
1 medium-size carrot( finely slice into strips)
red & yellow bell pepper( finely slice into strips)
Instructions
Into a mixing bowl, add the avocado & lime juice.
Mash with a fork. Season with salt & pepper.
Use a mandoline or potato peeler to cut long thin strips from the cucumber. Take a cucumber strip and spread a thin coat of the avocado mixture along the length of the cucumber. Roll it up needed.
Do the same with the rest of your cucumber strips.
