How To make Nevada Cowboy Chili
1/2 c Lard
3 md Onions; coarsely chopped
2 Bell peppers
2 Celery stalks; coarsely chop
1 tb Jalapeno peppers; pickled
8 lb Coarse grind beef chuck
30 oz Stewed tomatoes
15 oz Tomato sauce
6 oz Tomato paste
8 tb Ground Red hot chili
4 tb Ground Red mild chili
2 ts Ground Cumin
3 Bay leaves
1 tb Liquid hot pepper sauce
Garlic salt to taste Onion salt to taste Salt to taste Fresh ground black pepper 4 oz Beer
Water Heat the lard in a large heavy pot over medium-high heat. Add the onions, peppers, celery, and jalapenos. Cook, stirring, until the onions are translucent. Add the meat to the pot. Break up any lumps with a fork and cook, stirring occasionally, until the meat is evenly browned. Stir in the remaining ingredients with enough water to cover. Bring to a boil, then lower the heat and simmer, uncovered, for 3 hours. Stir often. Taste and adjust seasonings.

Caribbean Cowboy Chile!! Arizona style!
Now normally I would call this some Cowboy Chile Arizona style but I’m in Cancun and I always use Chile peppers local to the region that are exotic and delicious! Gonna take you about 45min to prepare this dish!
Start off by soaking the beans for 6-12 hours. You can use any beans but black beans generally are most nutritious. Strain the soaked beans and then add them to a pot. Fill the pot with water about 2 inches over the beans and cook for 45min on low/ medium heat. Finally strain beans and add to main pot.
Next you’ll slice up all your peppers depending how spicy you want it to be. If you don’t like spicy just cut up 1 bell pepper. I used a 1/4 bell pepper of 4 colors. In the video I added jalapeño pepper, Chile Guero and a Chile manzano. I usually throw in a habanero or Chile Serrano but that’s only for the brave!
Next you chop up the onions and garlic. Go easy on garlic is very acidic. Make sure to chop them super small if you don’t like big chunks. Same with Chile peppers.
Then we de seed and peel the tomato’s. It’s the food highest in lectins which may lead to leaky gut. Scoop out the seeds with a spoon then boil hot water and add the tomatoes for about 1min. The skin will just fall off. Careful it’s hot! Add to main pot.
We go for all the herbs and spices next. We got cumin, Chile pepper, thyme, and Tumeric. I keep my pepper mixed with Tumeric so it goes into a lot of my meals. Tumeric needs to be paired with pepper to be activate it’s benefits!
Next add 1 cup of tomato paste. You can make from scratch because it does have added salt but at least no processed sugar. That shit will kill ya. Go ahead and add 2 cups of water as well.
Next, season the meat with rosemary and sea salt. Add some avocado oil and cook meat for a couple min then add to main pot. Traditionally it’s made with ground beef but that can be more fatty so I went with some thin cut steak.
Finally mix it up, cover and cook on low heat for minimum 30min. The longer you cook the better. A crockpot slow cook all day is the most tasty. Pour yourself a some red wine while you wait.????Add your favorite cheese at the end, mix it up and you’re ready to eat!!!!
