How To make N.Yr.Eve Feast 1. Broiled Vegetable Medley
1/4 c Olive or veg oil
1 tb Rosemary; fresh, chopped
1 Garlic clove; minced
2 md Zucchini
1 sm Eggplant (3/4lb)
1 Red pepper
1 Lemon; in wedges
Boston lettuce leaves Flecked with rosemary and garlic, this collection of fresh vegetables makes a delicious start to any meal. Prefheat broiler. In small cup or bowl combine olive oil, rosemary and minced garlic. (If dried rosemary is used, reduce qty to 1 tsp.) Cut zucchini into long strips 1/2-inch thick. Cut eggplant into rounds 1/2-inch thick. Cut onion into rings 1/2-inch thick. Cut red pepper into
strips 1/2-inch thick. Place vegetables in single layer on large baking sheet. Brush with half the olive oil mixture. Broil 4-inches from heat source 5 minutes. Turn vegetables; brush with remaining olive oil mixture. Broil 4-6 minutes, until vegetables are tender. Sprinkle with salt and pepper to taste, Arrange vegetables on serving platter with lemon wedges. Tuck lettuce leaves under vegetables around platter.

Chicken Taco Casserole | Tex-Mex Casserole | New Years Eve Party Dish
For the shredded chicken:
4-5 chicken breast tenderloins
½ tsp salt
½ tsp black pepper
2 tbsp oil
For the mixture:
2 tbsp unsalted butter
¼ cup all purpose flour (maida)
1 ¼ cup heavy cream
Shredded chicken from above
1 tsp salt
4 tbsp taco seasoning
½ cup red bell pepper (capsicum)(finely chopped)
½ cup orange pepper (finely chopped)
¼ green pepper (finely chopped)
½ cup corn
½ cup black beans
¼ cup pepper jack cheese OR monterey jack cheese
Jalapenos for garnish
Olives for garnish
½ cup picante or salsa
Green onions for garnish
1 cup cheddar cheese
½ cup crushed tortilla chips for garnish on top
For the shredded chicken:
Marinate the chicken pieces with salt and pepper.
Heat oil and place the chicken in one layer. Cook for 3-4 minutes per side.
Start shredding with the help of forks.
Keep aside
For the mixture:
Melt the butter and add the flour on medium heat.
Cook until the raw flavor of the flour goes off (about 2-3 minutes).
Add the heavy cream and mix well to break all lumps.
Cook until slightly thick.
Add the shredded chicken and mix.
Add salt and taco seasoning. Mix well.
Add all the veggies one by one and mix again.
Grate the pepper jack cheese and mix.
Place the mixture in a greased baking dish and layer with jalapenos, olives, salsa, cheddar cheese, green onions and then the crushed tortilla chips.
Bake at 350°F (180°C) for 20-25 minutes until the cheese is melted and bubbly.
