If you love chips and queso dip, you're going to LOVE this easy Instapot Vegetarian Chili dinner recipe. Kids love it too! Instant pot recipes are great for busy weeknights when you need something easy, healthy and delicious to put on the dinner table. This recipe checks all those boxes.

INSTA POT CREAMY QUESO VEGETARIAN CHILI & ARUGULA PARMESAN SALAD
If you love queso dip, you will love this lighter version of chili from Eating Well magazine. This is so simple and tastes so decadent.
Serves 8
2 tablespoons extra virgin olive oil
1 large bell pepper, chopped
1 large onion, chopped
4 cloves garlic, chopped
3 teaspoons chili powder
1 teaspoon ground cumin
2 (15 oz.) cans pinto beans, rinsed
2 (15 oz.) cans diced tomatoes
1 (3-4oz) can green chiles
2 cups chicken broth or vegetable broth
1 teaspoon salt
2 cups shredded Mexican-style cheese blend
4 ounces reduced-fat cream cheese, cubed
2 tablespoons lime juice, plus wedges for serving
Tortilla chips and chopped cilantro for garnish
Heat oil in the Instapot set to sauté mode. Add bell pepper, onion, and garlic; cook, stirring occasionally until softened, about 3 minutes. Add chili powder and cumin; cook, stirring until fragrant; about 1 minute. Stir in beans, tomatoes, broth and salt. Close and lock the lid. Cook on high pressure for 10 minutes. Carefully release the pressure manually.
Mix shredded cheese and cream cheese into the chile, stirring until melted and smooth. Stir in lime juice. Top with tortilla chips and cilantro and serve with lime wedges, if desired.
ARUGULA PARMESAN SALAD
Serves 4
Dressing:
½ cup good olive oil
Juice of 2 lemons
½ teaspoon Dijon mustard
1 teaspoon kosher salt
½ teaspoon ground pepper
1 (4 oz) chunk good Parmesan or small package of pre-shaved Parmesan
Toss 4 handfuls of Arugula in a large bowl with just enough of dressing to moisten leaves. You will have dressing left over. Serve with shaved pieces of parmesan on top.

My version of a cheese dip or sauce quick k and easy under 5 minutes.
Kids love it and can be served as a great snack or appetizer.
Serve with corn chips, radish or any vegetables ....
Recipe
Butter 1tbsp
Chopped onion 2tbsp
Garlic cloves chopped 1tsp
Jalapeno chillies chopped 2 tsp (you can add more if you prefer it hotter.
Red chilli powder 1/2 tsp
Paprika a pinch
Sea salt as required
Cream 2 tbsp
Sour cream 150gms
Grated cheddar 100 gms
Cream cheese 1tbsp optional
Coriander chopped
Black pepper

Sometimes this is called a “queso flameado” but queso flameado is usually lit on fire with a shot of tequila - we’re not doing that today. We’re making a simple choriqueso the way we used to experience it here in
South Texas on the border. Sometimes this is made with rajas, sometimes with mushrooms or other chile pepper and onion toppings, but today we’re keeping it simple.
A lot of my barbecue passion and experience came from my father and grandfather, but the choriqueso and cabrito experience came from my father in law – Frank Nieto!
Today we’re cooking over the fire on the ProPit RPG Grill but you can cook this on the stove top or in the oven, whatever works best for you. All you need for this recipe is two packages of Chorizo de San Manuel, our favorite chorizo, and two packs of queso oaxaca.
This recipe is so, so easy to make. All we have to do is cook the chorizo in the pan, add the grated cheese, and then pull yourself a big ol delicious choriqueso taco. You can top this with your favorite salsa, guacamole, or anything else you like. Let’s fire it up and cook some choriqueso!

WHAT HEATH USED IN THIS VIDEO:

- Traeger Hickory Pellets
INGREDIENTS:
- 1 cup finely chopped onion
- 1/3 cup chopped, fresh cilantro
- 1 poblano pepper, chopped
- 2 lb Velveeta Cheese (1 large block)
- 1 8 oz bag of Tillamook Mexican Blend Shredded Cheese
- 1 lb sausage, cooked and drained (we used mild)
- 2 cans of Original Rotel
- 1 can of Chili with no beans (we used Hormel)
- 1 8 oz block of cream cheese
- 2 tbsp Heath Riles BBQ Beef Rub
- 2 tbsp Heath Riles BBQ Garlic Jalapeño Rub
DIRECTIONS:
1. Get pellet grill up to 300º. We used the Traeger Timberline 1300 with Hickory Pellets.
2. Mix all ingredients in a large pan.
3 .Place on grill for 45 minutes. Stir ingredients together.
4. Cook for another 30 minutes, stir again.
5. Cook for another 30 minutes until all ingredients are melted and combined well. This is a total cook time of 1 hour and 45 minutes.
6. ENJOY with chips of your choice.
*NOTE: if you want your dip to be thinner, you can add a little milk to achieve the consistency of your choice.
