How To make Mediterranean Shrimp and Bow Ties
6 oz Uncooked bow tie pasta(3cup)
1 T Olive or vegetable oil
1 lb Shrimp; shell, devein
1/2 c Green onion, cut in 1/2-inch
- pieces 2 ea Garlic cloves, minced
1/2 t Dried oregano
1/4 t Salt
2 T Lemon juice
1/2 c Sliced ripe olives
1. Cook pasta to desired doneness as directed on package; drain. Keep
warm.
2. Meanwhile, heat oil in large skillet over medium-high heat until
hot. Add shrimp, onions, and garlic; cook and stir 3 to 5 minutes or until shrimp turn pink. Remove from heat.
3. Add pasta to skillet with all remaining ingredients. Cook 1 to 2
minutes or until thoroughly heated.

OVEN TEMP: 450 F
INGREDIENTS:
????2 zucchini, halved length-wise and sliced (half moons)
????2 yellow squash, halved length-wise and sliced (half moons)
????2-3 carrots, peeled and cut into short sticks
????1 red bell pepper, cored and sliced into thin sticks
????1 yellow or orange bell pepper, cored and sliced into thin sticks
????1 red onion, halved and sliced (half moons)
????3 large garlic cloves, minced
????1 tbsp dried oregano
????1 ½ tsp fresh thyme
????Kosher salt
????Black pepper
????Extra virgin olive oil (here, I use Private Reserve EEVO)
????12 ounces short pasta of your choice
????8 oz grape tomatoes, halved
????Zest of 1 large lemon
????½ cup parmesan cheese, more to your liking
Mediterranean Shrimp Pasta

INGREDIENTS:
1 Zucchini (cut in to ½ inch rounds)
12 Shrimp (21/25 tail off)
½ pound bow tie pasta
1 tbs garlic (chopped)
¼ cup white wine
¼ cup lemon juice
¼ cup pasta liquid
3 tbs butter
¼ cup olive oil
2 tbs Pecorino Romano
1 tbs parsley (chopped)
DIRECTIONS:
1. Cook pasta to your desired doneness, reserving a ½ cup of the cooking liquid, cool and set aside.
2. In a medium sized sauté pan heat oil.
3. Once the oil is hot carefully add the zucchini and cook until slightly brown.
4. Once zucchini is slightly brown remove from pan and set aside.
5. In the same pan add the shrimp and cook until the shrimp is fully cooked. The shrimp should be pink at this point.
6. Remove the shrimp and set aside.
7. Remove the oil from the pan and discard.
8. Place the same pan back on heat and add 2 tbs. butter and the garlic.
9. Cook the garlic in the butter being careful not to brown.
10. Add the white wine to stop the cooking process and cook until the smell of alcohol dissipates.
11. Add the lemon juice and bring to a boil.
12. Add the cooked shrimp and zucchini back to the pan.
13. Add 1 tbs. of butter and parsley.
14. Add the pasta, the pasta water and pecorino.
15. Mix well until all are incorporated.
16. Garnish with parsley and pecorino.

BOWTIE PASTA SALAD - A Delicious Anytime Salad
An easy to make delicious anytime Bowtie pasta salad can be served as a side or just when you're hungry for just salad.
Shopping List:
12 ounces Bow tie pasta
1 pound chopped bacon
1 bushel fresh Romaine lettuce
½ diced medium sized onion 0
1 diced large tomato
1 cup mayo
Salt and pepper to taste
Directions:
Bring 4 quarts of water to a rapid boil.
Add the salt to the boiling water, not before.
Add the pasta and stir for about 1 minute to prevent it from sticking together.( NO NEED TO ADD OIL FOR THIS)
Cook the pasta about 2 minutes less than package directions then drain but don’t rinse.
Transfer the pasta to a bowl, cover and refrigerate for about 1 hour to chill.
After the pasta has chilled add the mayo, bacon, onion, tomatoes, and Romain lettuce.
Salt and pepper to taste and toss well.
Cover and refrigerate another 30 minutes to chill.
Serve cold and enjoy!
