Matzo brei is a super easy dish to make and a great use of leftover matzah. There's tons of ways to remix it as it really lends itself to adding mix-ins and toppings. It can be done sweet or savory but most of the time I'm perfectly happy eating it in the base version. I hope you try this super simple comfort food at least once!
Ingredients: 3 pieces of matzah 3 eggs (equal eggs to matzah) enough milk to cover matzah (water can also be used here) some butter (use schmatlz (chicken fat) if you can and want it to be savory) salt & pepper
Directions: Break up matzah pieces a little bit to fit in a bowl or basin if needed (I used a bowl but in hindsight I probably would have needed less milk if i had done it in a casserole or something). place matzah into the container and cover with milk (I probably used 3-4 cups of milk). Let soak for 10-15 minutes. Beat eggs in a separate bowl and begin breaking up the softened matzah directly into the eggs. It's ok for a good amount of milk to carry over to the eggs. Mix well. Melt some butter in a frying pan and add in the matzah-egg mixture. Cook until no liquid egg remains. Season with salt and pepper. Serve and enjoy!
Fry the vegetable filling. Mix eggs with milk. Add matzo pieces Leave for 1 minute Add the filling. Stir. Transfer to a pan. Fry with the lid closed for about 5 minutes - check that crust has formed on the bottom, not burnt. Turn with a cutting board, and fry for about 5 minutes on the other side. Cut Serve with labane cheese.
