2 White matzos Salt & pepper to taste 1/2 Onion, grated Boiling water 4 Eggs Fat for frying Break matzos into small pieces. Pour boiling water to cover over them and let stand a few minutes. Then drain and beat all ingredients together very well. Heat fat in skillet. Pour batter in. This should make 4 good sized omelets. Can be served with jelly, syrup, or sour cream. Variation: Substitute 2 c. farfel instead of matzo.

How to Make Matzah Brei

Fry the vegetable filling. Mix eggs with milk. Add matzo pieces Leave for 1 minute Add the filling. Stir. Transfer to a pan. Fry with the lid closed for about 5 minutes - check that crust has formed on the bottom, not burnt. Turn with a cutting board, and fry for about 5 minutes on the other side. Cut Serve with labane cheese.

Ingredients:
2 or more eggs 1 heaping tablespoon of Matzah Meal or use any kind of flour A pinch of Sugar or Lakanto Monk sugar or any other sugar substitute Cooking spray or oil or both
Directions:
Preheat a non stick skillet add cooking spray or canola oil or both ( approximately 1 or 2 tbs depending on your diet) you can certainly use more if you want Separate egg whites and yolks add egg whites to your mix master or electric hand mixer ( use your whisk instrument) allow egg whites to become fluffy and stiff add egg yolks add matzah meal and a pinch of sugar
Add mixture to your hot skillet turn to a medium heat make sure it's cooked on one side before flipping over then flip to other side you may need to flip a few times gently when making a larger one
add to a plate and top with a sprinkle of sugar!
Eat immediately! Enjoy!
For those of you who don't celebrate Passover and don't use matzah meal simply add a different flour instead!

*To lower the fat content like I did add less oil or a spray and for less sugar use Lakanto Monk sugar or any other sugar substitute! You can use sugar free syrup on top too!!!
*These are so light and fluffy! They makes a great breakfast,brunch, lunch, dinner, Snack or even dessert option! Add your favorite fresh berries too!!!! Why not!!????????
