CHAI LATTE XMAS COOKIES w/ MAPLE ICING bring out the best chai spice flavor and shortbread taste. It’s super fun, especially when you decorate it with maple icing and sprinkles. As always these cookies are refined sugar-free, vegan and gluten-free.
Whenever I bake cookies, I always lean on @bobsredmill for the baking ingredients. In this recipe, I used ground flaxseed for the flaxseed egg, coconut sugar, and gluten-free oat flour.
Chai spice:
-2 tsp ground cinnamon
-1/4 tsp ground cloves
-1/4 tsp ground cardamom
-1/8 tsp ground nutmeg
-1/4 tsp ground ginger
-1/4 tsp salt
-1 cup coconut sugar @bobsredmill
-1 flax seed egg (1 tbsp ground flax seed and 3 tbsp warm water-mix and let it gel together) or 1 large egg (for non-vegan)
-3/4 cup unsalted, softened, vegan butter
-2 1/2 cups gluten-free oat flour @bobsredmill
-2 tsp baking soda
-1 tsp vanilla extract
Maple Icing:
-1 cup powdered sugar
-5-6 tbsp maple syrup (start with 3 tbsp maple syrup, and stir add in 1 tbsp increments until you reached desired consistency)
-sprinkles of your choice
Preheat oven to 350 degrees F. In a large mixing bowl, whisk softened butter and coconut sugar until it turns a pale color. You can use a whisk (takes approx. 5-6 min) or electric mixer (takes approx 2-3 min.). Then add the wet ingredients. Then fold in the dry ingredients.
Covered with plastic wrap, once the forms into it dough ball shape. Set in the fridge for at least two hours.
Roll out the dough in between two parchment papers. It should be about 1/4 inch thick. Use your favorite holiday cookie cutters and place them apart about 2” from each other on a lined baking sheet. Bake for 10-13 min. Let it cool completely before icing.
